In fact, the dough for these rolls requires very little attention from you. If you need even more time, you can actually slow down the rising time by placing the dough in the refrigerator for each rise. The longer the dough takes to rise, the more developed the flavor.

The modern version of Aish Baladi is made with 100 percent whole wheat flour, and is even coated with wheat bran. This bread is really easy to make, as long as you have a very hot oven fitted with a baking stone. I've also seen sites that demonstrate it being baked on the stove top.

These Sfoofs are fragrant and sweet, but not overly so. When they were baking, our house was filled with an amazing aroma from the anise seeds, mahleb (also spelled mahlab), and orange blossom water in the dough.

The original recipe for the Tartine Country Bread can be found in the book, Tartine Bread by Chad Robertson, published in 2010. I bought this book, but then was so intimidated by the fact that the recipe and instructions were over 40 pages long. As my friend Robin describes it, it's "epic."
