Turkey Noodle Soup from Scratch

This turkey noodle soup from scratch is pure comfort food. Any time we roast a turkey, especially around the holidays, we save the carcass to make the broth for this turkey soup.

Turkey Noodle Soup from Scratch
Making homemade turkey soup after Thanksgiving or Christmas is probably the biggest food tradition that Mr. Kitchen and I share. He is a big fan of soup of any kind, so, years ago, when someone told him that you could make homemade turkey soup from the leftover carcass, he decided to take on making turkey soup from scratch.

Vietnamese-Style Pan Fried Halibut with Lemongrass and Nước Chấm Dipping Sauce

This pan fried halibut with lemongrass is an adaptation of a fish dish common in Vietnamese cooking, called Cá Chiên Xã. You can use any firm fish, such as mackerel, sea bass, cod, rockfish, or catfish. I just happened to have a gorgeous Alaskan halibut filet that worked beautifully with this recipe.

This Japanese Potato Salad with Yukon Gold Potatoes is creamy, acidic, and sweet at the same time.

Japanese Potato Salad with Yukon Gold Potatoes

This is the second time I've posted a Japanese Potato Salad. I pretty much fell in love with it with my first post, using Idaho potatoes. So did Mr. Kitchen, who, Irishman that he is, pretty much likes to have potatoes every day.

This version of Japanese Potato salad uses Yukon Gold potatoes. In addition, the potatoes are partially mashed instead of riced.

Shrimp Stuffed Cuban Potato Balls

These shrimp stuffed Cuban potato balls are inspired by the potato balls served by Porto's, a Southern California family run Cuban bakery with a serious cult following. There are actually bannetons (rising baskets) made expressly for theses loaves. While I love collecting bread baking toys, I do not have one of these, so I rigged up a large round deep dish pizza pan with a small inverted bowl in the center, and I lined the contraption with floured tea towels.

Homemade Pasta Made Simple | Cookbook Review

One of my favorite bloggers, Manuela of Manu's Menu, has written a new cookbook, Homemade Pasta Made Simple: A Pasta Cookbook with Easy Recipes & Lessons to Make Fresh Pasta Any Night.

The cookbook has 65 pasta recipes, 30 sauce recipes, and is super beginner-friendly.

The book begins with a description of the ingredients and equipment you will need to begin making your own pasta. It is divided into the following sections:
  • Hand shaped pasta
  • Ribbon-cut pasta
  • Stuffed pasta
  • Gnocchi and gnudi
  • Sauce recipes to mix and match with the various pastas
While she lives in Australia, Manuela was born and brought up in Milan, Italy, and talks about her memories of her family making pasta together on the weekends. She decided to write this book to show people how easy and fun it is to make fresh pasta from scratch.

Bacon and Gruyère Muffins | #Muffin Monday

These Bacon and Gruyère Muffins are loaded with chunks of melty cheese and are so easy to prepare in less than two hours. Even better, if you fry the bacon and dice the Gruyère the day before, you can make these muffins in less than an hour. You will look like a baking genius.

These bacon and Gruyère muffins, with a biscuit like texture, and loaded with bacon and the best cheese for baking (in my opinion) in the world, will pretty much become your new favorite savory muffin.

If I had to pick just one cheese to bake with, it would be Gruyère cheese. Even though it is an aged cheese with a firm and slightly grainy texture, it melts perfectly. It has a mild, sweet, and nutty taste.

To bring out the melty goodness of the Gruyère, I cut it into a small dice rather than grate it to better achieve little pockets of melty cheese.

It's been a long time since I've made oatmeal cookies. Too long! I used to have a recipe for an oatmeal chocolate chip cookie that assuaged some of the guilt of giving my kids cookies because they contained oats. Sadly, somewhere along the way, my first recipe box, with the few recipes I ever mastered as a young mom such as my mom's meatloaf, my friend's Chinese chicken salad, and a pretty tasty tuna dip that another friend served at her Tupperware parties, disappeared.
