Aish Baladi is an Egyptian whole wheat flat bread that looks a lot like pita bread, but is unique to Egypt.

In ancient Egypt, Aish Baladi was made with emmer, an ancestor of modern wheat.

The modern version of Aish Baladi is made with 100 percent whole wheat flour, and is even coated with wheat bran. This bread is really easy to make, as long as you have a very hot oven fitted with a baking stone. I've also seen sites that demonstrate it being baked on the stove top.

When in Beirut, if you purchase Kaak (street bread, or cart bread), you can ask the vendor to create a pocket in the "purse" and then sprinkle it with za'atar, sumak, or fill it with Halloumi or Cream Cheese. This is evidently the traditional way to eat this bread.

The original recipe for the Tartine Country Bread can be found in the book, Tartine Bread by Chad Robertson, published in 2010. I bought this book, but then was so intimidated by the fact that the recipe and instructions were over 40 pages long. As my friend Robin describes it, it's "epic."
