Spicy Grilled Rockfish with Garlic and Basil Butter

This spicy grilled rockfish with garlic and basil butter blew me away.

My cousin goes on an annual fishing trip to Alaska and brings back tons of glorious fish that is flash frozen on the docks and sent home. He is so generous in sharing it with our family.

Typically, he brings back salmon (which is getting more rare), halibut (the best!), and cod (amazing!). This year my care package included some rockfish.

"Rockfish?" you ask! It's not that well known but is well worth seeking out. It's a wonderful fish that lends itself to any dish that calls for a firm white fish. It's very mild, and not very fishy in flavor. Now, when I visit fish markets, and I see rockfish, I buy it to make this quick, flavorful, and easy dish.

This spicy grilled rockfish is filled with the flavors of cayenne, garlic, and basil. This dish is so easy to make, and brings out the delicious flavor of the fish without overwhelming it.

I briefly marinated the fish in oil and lemon juice, grilled it, and then drenched it with this amazing butter, garlic, basil, and cayenne sauce.

This grilled rockfish recipe is perfect for a "company's coming" dinner or even a week night meal.

This rockfish can be prepared on an outdoor grill as well as an indoor cast iron grill pan. Either way, the fish is ridiculously good.

Spicy Grilled Rockfish with Garlic and Basil Butter

Ingredients

  • 2 pounds rockfish fillets
  • 3 tablespoons vegetable oil
  • 1 tablespoon fresh lemon juice
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons finely chopped fresh basil
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Marinate the fish in the oil and lemon juice for 30 minutes.
  2. In the meantime, heat the butter in a small saucepan over low heat with the garlic, basil, and cayenne pepper.
  3. Grill the fish over direct heat for about 5 minutes per side, depending on the thickness of the fish. Serve with the butter, garlic, basil, and cayenne sauce.
Yield: 4 servings

  5. I would like your garlic basil butter on all the things, Karen! I was first introduced to Rockfish when Camilla's son made a rockfish burger for a Sunday Supper book review but I've never tried it myself. I must look into what it might be called here, if we even have it. How wonderful to have a generous fisherman in the family!
