Found this recipe. Substituted my own starter for the sponge and used my Romertopf bread baker. This was delicious. We almost ate half the loaf last night. I think I'm going to make a second loaf! Handling the high hydration dough was just a little tricky but luckily I've watched a lot of videos. Basically, what you are doing is tightening the top so that the bread rises up by tucking under the "skin." Regarding the yeast, the number is correct. Unfortunately, I've never used fresh yeast, but you can use less yeast if you want. The rising times might be longer, but that helps develop flavor.
