Chicken Chow Fun from Karen's Kitchen Stories

This is Chicken Chow Fun, but it is missing the haw fun (the rice noodles). 

Chow Fun is essentially a stir fry with meat, veggies, and broad rice noodles (the Fun). As a matter of fact, for another Wok Wednesdays adventure, we all made Beef Chow Fun, so I am "experienced" using the noodles. 

Here's proof. They have actually been in my house.

Sadly, for this dish, I could not leave well enough alone. Grace Young, the poet laureate of wok cooking, had posted a recipe and instructions for making your own noodles, and all of my Wok Wednesday buddies were posting photos of their home made haw fun (noodles). Logically, this meant I had to jump in too. Not. I finally found my Waterloo.

An open letter to Grace Young:

Dear Grace,
I'm so sorry I failed you. I know you feel badly, and I know you had such high hopes for me! I promise, I do not blame you or your recipe, as evidenced by the many Wok Wednesdays members' gorgeous noodles. I'm sure it was me. My glass pie plates are old, well worn, and scratched. I'm sure the noodles stuck to them because of that. I'm going to invest in some nonstick pie plates and keep trying until I conquer this! I guess what I'm trying to say is... "it's not you... it's me."

P.S. In the meantime, I still made this amazing stir-fry of chicken, shiitake mushrooms, and baby bok choy from your recipe, so all is not lost. In fact, it made an excellent low carb meal! Besides, I'd spent the weekend making these buns and these cookies. I needed to skip the noodles. Right?

Ingredients include boneless skinless chicken breasts, garlic, ginger, Shao Hsing rice wine, oyster sauce, soy sauce, white pepper, chicken broth, sesame oil, salt, baby bok choy, and fresh shiitake mushrooms.

This dish, even without the noodles, is very tasty and aromatic. While I'm normally not a big fan of mushrooms (there are a lot in this stir-fry), the shiitake mushrooms in this dish are so meaty and tasty. 

The Wok Wednesday group has agreed not to publish the actual recipe. This recipe is on page 276 of the book Stir Frying to the Sky's Edge by Grace Young. We are almost done wokking our way through the entire book!

  1. Great post!! Love the "open letter" to Grace. Sorry your noodles did not turn out for you. I'm so jealous of everyone's posts of the homemade noodles. I too plan on jumping on the bandwagon and making them. Will revisit the beef chow fun recipe since I had noodle issues with that one. Wish me luck! Your stir-fry still looks delicious. :)

  2. Dear Karen, Thank you for your "it's not you it's me" open letter! I'm going to revisit the recipe to see what could be the issue. I don't understand how mine steamed up and rolled up but yours stuck. Did you see Birgit used foil and only a few drops of oil? I'm still pondering this one. PS Your Chicken Chow fun without the fun is a beauty.

  4. Karen, the open letter was a masterpiece! I am actually amazed that you would even HAVE a Waterloo when cooking is concerned...

    Now, I think you will try to Have Fun with Haw Fun soon enough.. am I right or am I right? ;-)
