No Bake S'mores Pie

This No Bake S'mores Pie is a wonderful way to use the flavors of your favorite campfire treat to create a showstopping dessert.

You don't need a campfire or metal skewers (or as my Girls Scout troop used to use, untwisted metal hangers) to make this dessert! 

Who doesn't love the classic combination of Graham crackers, chocolate, and marchmallow?

This S'mores Pie is amazingly easy to put together. Plus, you can make both the crust and the filling up to two days in advance. 

To Make This No Bake S'mores Pie:

For the Crust: You will need crushed Graham crackers and melted butter. Just mix them together, press them into a nine inch pie pan and refrigerate to let it set. 

For the Chocolate Filling: You will need heavy cream, butter, and chopped chocolate. You can use either milk chocolate, semi-sweet chocolate, or bittersweet chocolate. Use your favorite! I used 56% chocolate this time. The most tedious step is chopping the chocolate. 

Place the chopped chocolate in a bowl and heat the heavy cream in a pan. Pour the hot cream over the chopped chocolate and let the mixture sit for a minute our two. Whisk the chocolate and cream until smooth and then stir in the softened butter. After that, pour the filling into the pie tin and chill until set.

For the Marshmallow Frosting: The ingredients include egg whites, sugar, cream of tartar, and vanilla. 

You combine the egg whites, sugar, and cream of tartar in a heat proof bowl (preferably the bowl of a stand mixer) over a pan of simmering water and whisk for about four minutes until the sugar has dissolved. After that, move the bowl to the stand mixer and beat until thick and fluffy and then beat in the vanilla. Dollop it on slices of the pie and garnish with Graham cracker crumbs.

No Bake S'mores Pie

No Bake S'mores Pie

This No Bake S'mores Pie is a wonderful way to use the flavors of your favorite campfire treat to create a showstopping dessert. 


Ingredients

  • 1 1/2 cups Graham cracker crumbs, plus more for garnish
  • 1/2 cup salted butter, melted
  • 16 ounces chocolate (milk, semi-sweet, or bittersweet), chopped
  • 2 cups heavy cream
  • 1/2 cup unsalted butter, softened and sliced
  • 4 large egg whites
  • 1 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 2 teaspoons vanilla extract

Instructions

  1. Mix the Graham cracker crumbs and the melted butter together and press the mixture into a 9 inch pie pan. Refrigerate to set while you are making the filling.
  2. Place the chopped chocolate into a medium-large bowl. Place the heavy cream in a medium saucepan and heat over medium low heat until the cream is hot but not boiling. Pour the cream over the chopped chocolate and let sit for two minutes. Then, whisk the mixture until smooth. Add the butter pieces and stir until fully incorporated.
  3. Pour the chocolate mixture into the pie crust and refrigerate at least 2 hours, to set.
  4. To make the frosting, whisk the egg whites, sugar, and cream of tartar together in a heat proof bowl or the bowl of a stand mixer and place the bowl over a pan of simmering water (do not let the bottom of the bowl touch the water). Whisk constantly for about four minutes, until the sugar dissolves. Transfer the bowl to the stand mixer (or use a hand mixer) and, using the whisk attachment starting on low speed and increasing the speed to high, beat the eggs and sugar until thick and shiny, about six minutes. Add the vanilla and beat for another minute.
  5. Dollop the frosting on the pie (or pie slices) and garnish with Graham cracker crumbs. Serve.
