Rondo's | A Dutch Treat

Rondo's are little Dutch treats that are kind of a cross between a pie and a cookie.... and maybe even cake. They are so amazingly tasty. The flavor pretty much blew me away.

The crust part is a cross between a pie crust and shortbread, and totally flakey. It is filled with a lemony almond paste that is mixed with an egg. The rondos are ridiculously tasty. Once I cut into one of them for "quality control," I could not stop eating it.

This ham and asparagus quiche is perfect for brunch or lunch. It's also a very elegant way to have breakfast for dinner. It's both hearty and nutritious, and leftovers are wonderful reheated for breakfast. Serve it with a green salad, sliced fruit or a bowl of berries, and a glass of crisp sparkling wine, and you have a wonderful meal.

Have you ever heard of Applejack? It's an American spirit, produced by Laird's, which is a blend of distilled cider and neutral spirits, not to be confused with a My Little Pony character. I impulsively picked up a bottle, and have used it as a substitute for both brandy and whisky in a few cocktails with delicious success.

Adjaruli Khachapuri is a traditional Georgian cheesy flatbread and is usually topped with an egg and butter. It is so savory and delicious straight from the oven. Finally a bread you don't have to let cool completely before eating! Even though it might look complicated, it is very easy to make. I will definitely be baking this again.

Lightened Up Salmon Noodle Casserole

Oh my goodness, this salmon noodle casserole is so good! At less than 600 calories per serving for a really big slice, it is so satisfying. Add a little green salad, and you have a wonderful and super easy weeknight or even Sunday dinner. Mr. "Steak and Potatoes" Kitchen loved this too, and I quote, "this is really good!"

I was a little bit nervous about making this Spelt and Einkorn Sourdough Bread with Caramelized Onions. I've worked with spelt before, but always by combining it with bread flour. In fact, I have five breads on this blog that contain whole spelt, including this Spelt and Whole Wheat and this Basic Country Loaf with Spelt. I've never worked with einkorn flour.

These Baby Yukon Gold Parmesan Hasselback Potatoes with Herbes de Provence are ridiculous, in a very good way. Mr. Kitchen, Irish born and a total potato lover, absolutely loved them.

Evidently, Hasselback potatoes originated in the 16th century in a restaurant in Stockholm, and are not named for a former Seattle Seahawks quarterback. I had no idea!

I was really nervous about making this Kamut Sourdough bread. Kamut is a grain I have never baked with before and I wasn't sure what to expect.

Current nutritional fads notwithstanding, I've been intrigued with using heirloom grains in my breads, and impulsively bought a bag of Kamut berries a while ago.
