Sopa de Albóndigas | Mexican Meatball Soup
This Sopa de Albóndigas was inspired by a Mexican cookbook I have had forever.
This Sopa de Albóndigas, or Mexican Meatball Soup, is pretty simple, but completely flavorful. Mr. Kitchen declared that this soup is "amazing." He normally is pretty tentative about the spicy food I make, but he adored this soup.

Slow Cooker Chicken and Corn Chowder
This Slow Cooker Chicken and Corn Chowder is so warming, filling, rich tasting, and perfect for a winter lunch or dinner.
I am so excited about this Slow Cooker Chicken and Corn Chowder. I love the fact that this is not a "dump and run" slow cooker recipe. There's some prep involved, both at the beginning and end, which adds freshness and deep flavor to the soup.

I have been obsessing about making Cheddar Cheese Hushpuppies ever since we had some as an appetizer at a wonderful restaurant while on vacation in Santa Barbara with our friends Jim and Michele. The hushpuppies were so good that we all went back to the same restaurant on the last day of our trip and ordered them again. Several months later, Mr. Kitchen and I headed back to Santa Barbara for a weekend stay. Guess what we had with our cocktails...
Clearly, I needed to try to make these at home.

Cemita Poblana with Pork Milanesa
This Cemita Poblana is based on a regional Mexican sandwich from the historic city and state of Puebla located southeast of Mexico City. It is distinguished by its sesame seed roll.
I loved this sandwich! It's soooo good! The flavors of the layered fillings give it an amazing depth of flavor. There are no extraneous ingredients, such as lettuce, to fill out the sandwich. It stands on its own.
