The Wedge Salad with Blue Cheese Dressing

This wedge salad recipe, with one of the most amazing Danish blue cheese dressings, will take you back to the 1950s and 1960s. It begins with a wedge of iceberg lettuce, which is surrounded by bacon and tomatoes, and drizzled with an amazing blue cheese dressing.

Iceberg wedges with blue cheese and bacon were common on restaurant menus in the 1950s and 1960s, but kind of fell out of favor in the 1970s, when darker, more delicate leafy greens were recognized as more nutritious.

Baby Greens Salad with Pomegranate, Blue Cheese, and Pecans

This baby greens salad with pomegranate, blue cheese, and pecans is refreshing and light, and showcases the fall flavors of pecans and pomegranate. It's similar in looks to this fennel, pomegranate, and arugula salad, but with an entirely different flavor.

Grilled Chicken Chopped Salad with Duck Bacon

I loved this grilled chicken chopped salad with bacon and blue cheese. It takes just about 30 minutes from start to finish to make. Possibly because the chicken is thinly sliced before grilling, it's not dried out, and the char adds a wonderful dimension of flavor. Before it's grilled, the chicken is rubbed with a garlic paste. It's about the tastiest boneless skinless chicken breast I've ever had.
