Every year, my cousin goes fishing in Alaska. When he gets to the dock, the fish is cleaned and then flash frozen, shrink wrapped, and then shipped home. He ends up with a freezer full of amazing fish. Typically, he ends up with equal amounts of salmon, halibut, and cod.

And because I'm a bread nutcase, I definitely had to make ridiculously soft and tasty homemade hamburger buns to go with these salmon burgers.

These Baby Yukon Gold Parmesan Hasselback Potatoes with Herbes de Provence are ridiculous, in a very good way. Mr. Kitchen, Irish born and a total potato lover, absolutely loved them.

Evidently, Hasselback potatoes originated in the 16th century in a restaurant in Stockholm, and are not named for a former Seattle Seahawks quarterback. I had no idea!

I have made this English Muffin Bread many times, and can't believe I never posted it! This bread, sliced, is kind of the equivalent to English muffins, without the griddle. The bread pan is dusted with corn meal to mimic traditional English muffins. This bread is delicious toasted and spread with butter and jam. The combination of yeast and baking powder produces the "nooks and crannies" that one would expect from English muffins.
