Watermelon Rum and Sparkling Wine Cocktail

This watermelon, rum, and sparkling wine cocktail has "summer" written all over it.

Between the heat and the abundance of watermelons right now, this cocktail really hits the spot. 

Serve it on the patio before dinner with friends. Suggested light, easy, and casual appetizers that would go perfectly with this cocktail include chips and corn salsa, Chex mix, shrimp cocktail cucumber cups, and mini caprese salad skewers

Rum: You can use either dark or white rum, depending on what you have on hand and your taste. 

Watermelon: I recommend buying a small seedless watermelon or pre-cut chunks of the fruit. Puree the watermelon chunks in a blender. You will need 1 1/2 liquid ounces of pureed watermelon per cocktail. 

Citrus Liqueur: I prefer Cointreau, but Triple Sec will also work. Patron Citronge or a curaçao liqueur are good for this cocktail too. 

Limeade Concentrate: I like to use this instead of sweet and sour. You can keep it in a sealed container in your freezer and it will last a very long time. It's wonderful added to margaritas too. 

Pineapple Juice: Just to add some tropical flavor. 

Orange Bitters: A great blend of orange, herbs, and spices. 

Cava: A wonderful Spanish sparkling wine that you "float" over the top of the cocktail. Of course, prosecco would also work just fine. 

Tajín: A chile lime spice for coating the rim of the glass.

For the optional Tajín rim, rub the glasses with a lime and dip the rims into a bowl of Tajín. Then add ice to the glasses. 

Next, combine all of the ingredients in a blender with the exception of the Tajín and the Cava and then pour the mixture over the ice in the glasses. 

Finally, top each glass with a float of Cava. 

You can garnish each cocktail with a sprig of cilantro and a slice of lime if you like.

If you'd like, you can sustitute tequila or pisco (a South American brandy) for the rum. You can also garnish the glasses with chunks of watermelon. 

You could also use the watermelon and rum mixture as the base for mimosas if you like. 

You can serve these cocktails in highball, old fashioned, margarita, or large wine glasses.

This watermelon, rum, and sparkling wine cocktail has "summer" written all over it.


  • 3 fluid ounces of rum
  • 3 fluid ounces of pureed watermelon
  • 1 ounce of citrus liqueur such as Cointreau or Triple Sec
  • 1 tablespoon frozen limeade concentrate, such as MinuteMaid
  • 1/2 ounce pineapple juice
  • 12 dashes orange bitters
  • Cava
  • Tajín for rimming the glasses
  • Optional garnishes such as lime slices and cilantro


  1. Combine all of ingredients with the exception of the cava, Tajín, and the garnishes in a blender.
  2. Rub two glasses with a slice of lime and coat the rim with the Tajín. Fill the glasses with ice cubes.
  3. Pour the ingredients into the two glasses.
  4. Slowly pour the cava into the top of each cocktail (to float on top). Garnish and serve.
