The mixture of chipotle chili and brown sugar is a wonderful combination of sweet and hot. These nuts are the perfect cocktail hour appetizer or snack.

These sweet and spicy roasted mixed nuts are so easy to pull together. You probably already have all of the ingredients in your pantry and freezer. They are the perfect appetizer at a holiday party or get together. They are a delicious snack to have on hand too.
This recipe is pretty flexible too. You can easily change the proportions of the nuts, or just go with one or two, depending on what you have on hand. Or, substitute fresh chopped rosemary for the thyme!
Like my rosemary, cayenne, and brown sugar cashews, these mixed nuts are wonderful packaged as hostess gifts too. I like to buy cute little serving bowls in bulk at Home Goods, fill them with these sweet and spicy nuts, wrap them in cellophane tied with a pretty bow and give them as gifts to my colleagues at work during the holidays.
Sweet and Spicy Roasted Nuts Ingredients
You only need a few simple ingredients.
Unsalted pecans, cashews, and almonds. If you only have salted nuts on hand, you can cut back on the salt in the recipe.
You could always substitute other nuts as well such as walnuts for the pecans, and peanuts for the cashews...
Light brown sugar. It contrasts beautifully with the chipotle powder and the sea salt in the recipe. You only need 1 1/2 tablespoons. I used brown sugar from one of our Flavors of Fall sponsors, Dixie Crystals.
Chopped fresh thyme, chipotle chili powder, and melted unsalted butter.
Kosher or coarse sea salt. I used fleur de sel, my favorite sea salt.
Mixing up a batch of nuts takes no time at all. Just roast them in a 400 degree F oven for about 10 minutes, and then toss them in the butter, sugar, spices, and herbs.
They are delicious warm, and just as good later. I had a tough time sharing!

Sweet and Spicy Roasted Nuts

Ingredients
- 1/3 pound unsalted almonds
- 1/3 pound unsalted cashews
- 1/3 pound unsalted pecans
- 1 1/2 tablespoons light brown sugar (preferably Dixie Crystals)
- 2 teaspoons chopped fresh thyme
- 1/2 teaspoon chipotle chili powder
- Kosher or sea salt
- 2 tablespoons unsalted butter, melted
Instructions
- Heat your oven to 400 degrees F with a rack in the middle position. Spread the nuts in a single layer on a half sheet pan and bake them until they are fragrant and starting to brown, about 10 minutes.
- Combine the sugar, thyme, chipotle powder, and salt in a small bowl.
- When the nuts are roasted, toss them thoroughly in the melted butter, and then the mixed spices. Add more salt to taste. Serve warm or at room temperature.

I love spiced nuts! I am the only nut eater in my house though, but that won't stop me. If anything it's better, I get to keep them for myself!
