Homemade Parmesan Potato Chips
Homemade potato chips. With freshly grated parmesan and a sprinkle of sea salt. What else can I say?
Equipment:
A very sharp knife or one of these.
4 Qt sauce pan or dutch oven.
Heat proof slotted spoon or spider strainer.
Candy thermometer or instant read thermometer.

Twix Brownies with Dulce de Leche Sauce
A jar of Stonewall Kitchen Dulce de Leche sauce has been sitting in my cupboard for a few months.
Then I visited the My Baking Addiction blog looking for a dessert for Mother's Day and saw this recipe.
The recipe results in fudge-like brownies with mini Twix bars hidden inside. And, of course, topped with caramel sauce.
The recipe is more novelty treat than proper dessert, but if I wanted to be fancy, I could see layering these with ice cream in a small glass, sort of like a mini trifle.
Rather than make the caramel sauce described in the recipe, I broke out the dulce de leche. Perfect occasion.

- I used 4 1/4 ounces of all purpose flour.
- I used two soup bowls to divide the batter in half and poured the batter into each bowl until it looked like it was evenly divided.
- I baked them for 30 minutes and didn't bother testing them for doneness. I think it would be hard to tell anyway.

Roasted Jalapeño Salsa
Rumor has it that spicy food speeds up your metabolism. That's a cool bonus. Either way, I love it.
This is my favorite salsa recipe. Traditionally, the ingredients in this salsa are roasted over the flame on a gas range in heavy duty foil. It takes forever, and the foil often breaks due to the acidity of the ingredients. I prefer broiling it all at once.

Tangelo Margarita
Happy Cinco de Mayo
We have had an unbelievably productive tangelo tree. We've made tangelo sorbet, I've got tangelocello in the closet steeping, and I have eaten at least one tangelo a day for the last four months. Vitamin C.. check.
So here's a little tribute to Cinco de Mayo.
Tangelo Margarita
1/2 to 2 oz tequila blanco
1/2 oz Citronge, Cointreau, or triple sec
1/2 oz Grand Marnier
the juice of 2 limes
the juice of one tangelo
sea salt or kosher salt
Chill a martini glass in the freezer
Fill a shaker or a large glass with ice
Add ingredients and stir or shake
coat rim of glass with lime juice and dip in salt
Add the shaken ingredients
Excellente
