Rondo's | A Dutch Treat

Rondo's | A Dutch Treat

Rondo's are little Dutch treats that are kind of a cross between a pie and a cookie.... and maybe even cake. They are so amazingly tasty. The flavor pretty much blew me away.

The crust part is a cross between a pie crust and shortbread, and totally flakey. It is filled with a lemony almond paste that is mixed with an egg. The rondos are ridiculously tasty. Once I cut into one of them for "quality control," I could not stop eating it.

Chocolate Chip Muffins | #MuffinMonday

Chocolate Chip Muffins

These chocolate chip muffins are so easy to make, and the resulting crumb is so moist and tender. I know that sounds cliche, but I'm serious! This may be my new favorite muffin, with or without the chocolate chips.

Ham and Asparagus Quiche

Ham and Asparagus Quiche

This ham and asparagus quiche is perfect for brunch or lunch. It's also a very elegant way to have breakfast for dinner. It's both hearty and nutritious, and leftovers are wonderful reheated for breakfast. Serve it with a green salad, sliced fruit or a bowl of berries, and a glass of crisp sparkling wine, and you have a wonderful meal.

Apple Brown Derby Cocktail

Apple Brown Derby Cocktail from Karen's Kitchen Stories

This Apple Brown Derby Cocktail is an apple-y twist (or should I say slice?) on the cocktail from the famous restaurant from mid 20th century Hollywood.

Have you ever heard of Applejack? It's an American spirit, produced by Laird's, which is a blend of distilled cider and neutral spirits, not to be confused with a My Little Pony character. I impulsively picked up a bottle, and have used it as a substitute for both brandy and whisky in a few cocktails with delicious success.

Chocolate Valentine Sugar Cookies | #CreativeCookieExchange

Chocolate Valentine Sugar Cookies with Royal Icing

These Chocolate Valentine Sugar Cookies illustrate why there are not a lot of frosted cookies or decorated cakes on this blog. This is the very first time I tried "piping and flooding" cookies with royal icing, and it was a royal pain. Clearly, I'm more of a "rustic" baker.

Stir-Fried Romaine Lettuce with Garlic Chili | Wok Wednesdays

Stir-Fried Romaine Lettuce with Garlic Chili | Wok Wednesdays

This Stir-Fried Lettuce with Garlic Chili pretty much caused me to eat an entire head of romaine lettuce in one sitting. You see, if you stir fry lettuce, or any leafy vegetable such as lettuce or bok choy, it reduces in volume, making it seem like there is less, and concentrating and sweetening the inherent flavors of the vegetable.

If you add garlic, jalapeño, and and a simple sauce of shaoxing wine, soy sauce, and chicken broth, you end up with a pretty amazing tender crisp dish that you had no idea would be so tasty.

Adjaruli Khachapuri - Georgian Flatbread

Adjaruli Khachapuri - Georgian Flatbread

Adjaruli Khachapuri is a traditional Georgian cheesy flatbread and is usually topped with an egg and butter. It is so savory and delicious straight from the oven. Finally a bread you don't have to let cool completely before eating! Even though it might look complicated, it is very easy to make. I will definitely be baking this again.

Lightened Up Salmon Noodle Casserole | #FishFridayFoodies

Lightened Up Salmon Noodle Casserole

Oh my goodness, this salmon noodle casserole is so good! At less than 600 calories per serving for a really big slice, it is so satisfying. Add a little green salad, and you have a wonderful and super easy weeknight or even Sunday dinner. Mr. "Steak and Potatoes" Kitchen loved this too, and I quote, "this is really good!" He waxes poetic.

Have you ever been to Costco to pick up a bottle of olive oil, lump crab meat, and some of that amazing Stretch-Tite plastic wrap and the next thing you know, you've also got a huge bag of pork tamales, a couple of cookbooks, a big bag of Kirkland crumbled precooked bacon (can I just tell you, it's the best), a double pack of face cream, and a giant stack of shrink wrapped cans of salmon in your cart? I know, sort of specific. Yeah, that was me.

Spelt and Einkorn Sourdough Bread with Caramelized Onions | #BreadBakers

Spelt and Einkorn Sourdough Bread with Caramelized Onions and herbes de Provence

I was a little bit nervous about making this Spelt and Einkorn Sourdough Bread with Caramelized Onions. I've worked with spelt before, but always by combining it with bread flour. In fact, I have five breads on this blog that contain whole spelt, including this Spelt and Whole Wheat and this Basic Country Loaf with Spelt. I've never worked with einkorn flour.

Baby Yukon Gold Parmesan Hasselback Potatoes with Herbes de Provence

Baby Yukon Gold Parmesan Hasselback Potatoes with Herbes de Provence

These Baby Yukon Gold Parmesan Hasselback Potatoes with Herbes de Provence are ridiculous, in a very good way. Mr. Kitchen, Irish born and a total potato lover, absolutely loved them.

Evidently, Hasselback potatoes originated in the 16th century in a restaurant in Stockholm, and are not named for a former Seattle Seahawks quarterback. I had no idea!

60 Percent Kamut Sourdough Bread

60 Percent Kamut Sourdough Bread

I was really nervous about making this Kamut Sourdough bread. Kamut is a grain I have never baked with before and I wasn't sure what to expect.

Current nutritional fads notwithstanding, I've been intrigued with using heirloom grains in my breads, and impulsively bought a bag of Kamut berries a while ago.

Fifteen Favorite Breads from 2015

Fifteen Favorite Breads from 2015 from Karen's Kitchen Stories

These are fifteen of my favorite breads from 2015. Actually, I'm pretty fond of all of the bread I made this year, so it was really difficult to narrow this list down to 15. Last year I was able to choose 10....

I was able to feature five more breads in my Readers' Favorites post, but that still leaves out 41 really good breads, flatbreads, and crackers. Yes, loyal readers, I baked 61 breads (including pizzas) last year!
