Mango Cream with Berries

This mango cream with berries is an amazing dessert that is deceptively easy to put together with fresh mangos, limes, two kinds of milk, and finished with a generous amount of fresh berries.

This mango cream is pretty magical. All you need is a peeler, a knife, a blender, and a can opener to create this smooth and custardy dessert.

This mango cream with berries, or crema de mango con moras, with it's creamy and custardy texture requires no cooking, no eggs, and no cream!

Ingredients in Mango Cream with Berries:

Ripe mangoes - I used mangoes from one of our sponsors, Melissa's Produce. According to Melissa's, the mango is known as the king of fruits and is high in vitamins and nutrients. Incidentally, it's also fabulous for tenderizing meats. Who knew?

Lime juice - I used key limes from our sponsor, Melissa's Produce

Dairy - Sweetened Condensed Milk and Evaporated Milk.

Berries - I used a combination of fresh strawberries, blueberries, and blackberries. Raspberries would work well too. 

You can also layer in some sweetened whipped cream and sprinkle in some broken up sugar or gingersnap cookies for a parfait effect.

How to Make Mango Cream:

First, peel and cut mangoes into chunks and place them a blender.  

Next, add the condensed milk, evaporated milk, and the lime juice. Blend everything for about three minutes on high until the mixture thickens. 

Finally, pour the mixture into bowl, cover, and refrigerate overnight, until it thickens even more.

How does this mixture thicken with out any egg or starch? 

First, the combination of the acid from the fruit with the milk will naturally thicken the ingredients. In addtion, mango is very high in pectin. 

Once you've let the mango cream rest in the refrigerator, you have the most amazing and versatile dessert ingredient ready to serve. Your guests will be so impressed!

The recipe will serve 10 to 12, making it perfect for a dinner party. You can also keep it in the refrigerator for a few days for an after school treat or a nightly dessert. 

For a sweeter take, top this mango cream with the raspberry sauce that I've served with panna cotta along with some whipped cream. So good.

This mango cream with berries is an amazing dessert that is deceptively easy to put together with fresh mangos, limes, two kinds of milk, and finished with a generous amount of fresh berries.

Ingredients

  • 580 grams (1 1/2 pounds) about two large ripe mangoes, peeled and pitted
  • 1 (14-ounce) can sweetened condensed milk
  • 1 (12-ounce) can evaporated milk
  • 3 tablespoons freshly squeezed lime juice
  • About 3 cups assorted fresh berries
  • Sweetened whipped cream (optional)

Instructions

  1. Add the mangoes, condensed milk, evaporated milk, and lime juice to a blender. Blend for about 3 minutes until thickened.
  2. Transfer the cream to a bowl, cover with plastic wrap, and refrigerate for at least four hours.
  3. Serve with assorted berries and optional whipped cream.

  2. I love Mango, but can never pick a ripe one. Maybe I will hit up the produce manager to pick a couple out. The frozen stuff is always under-ripe - blech.

  11. I just ran the calcium on this and it's approximately 2/3 of a glass of milk. I am making this as soon as I get a can of evaporated milk!
