Amish Country Casserole

This Amish country casserole is an easy, hearty, economical, and satisfying dish for feeding your family.

This casserole is the epitome of easy comfort cooking. Throw together pasta, ground beef, an easy sauce, and a topping of cheese, and you you can get dinner on the table within an hour. 

While this casserole is known as "Amish" Country Casserole, because it contains canned condensed soups and store bought pasta, it probably got its name due to its simple nature (rather than true Amish authenticity). I've also seen this old fashioned hamburger and pasta casserole referred to as Amish yumasetti and beef noodle casserole.

Simple Ingredients:

Pasta: I used macaroni but you can also substitute other pasta shapes or even egg noodles. 

Ground Beef. 

Onion: Cooked with the ground beef before adding to the pasta. 

For the Sauce: Canned condensed mushroom soup, canned condensed tomato soup, whole milk, Tabasco sauce, and salt and pepper. 

Cheese: For topping the ingredients before baking. I used Monterey Jack cheese.

Optional Ingredients and Variations:

You can add frozen peas or other vegetables to the mixture before baking. 

Other optional additions can include topping the cheese with breadcrumbs for an extra crunch along with a light sprinkling of dried parsley. 

It the spirit of country cooking, keep it simple!

I baked this casserole in a 9 inch square casserole. Any 2 quart casserole, including Pyrex, will work. 

Make-Ahead and Storage:

You can make and assemble the ingredients for this casserole in advance and then bake it the next day. You can also store leftovers in the refrigerator for up to 3 or 4 days and reheat them in a 350 degree F oven. 

Serve this casserole with a side salad and sourdough bread or garlic bread for a quick and easy meal!

This Amish country casserole is an easy, hearty, economical, and satisfying dish for feeding your family. 


Ingredients

  • 1/2 pound (8 ounces) dry macaroni
  • 1 tablespoon olive or neutral oil
  • 1 medium yellow onion, peeled and chopped
  • 1/2 teaspoon salt, plus more to taste
  • 1 pound ground beef
  • 1 10.5 ounce can of condensed cream of mushroom soup
  • 1 10.75 ounce can of condensed tomato soup
  • 1 ounce (1 cup) whole milk
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1 cup (4 ounces by weight) freshly grated cheese such as Monterey Jack, cheddar, or Colby cheese.

Instructions

  1. Spray a 2-quart casserole with non-stick spray. Heat the oven to 350 degrees F.
  2. Cook the pasta according to package directions to al dente. Drain in a collander.
  3. To a 10 to 12 inch skillet, add the oil and heat. Add the onion and cook until softened, stirring regularly. Add the ground beef, and cook until browned and just cooked through, breaking it up as you stir it while cooking.
  4. Add the cooked beef mixture to the casserole dish and stir in the pasta.
  5. Combine the soups, milk, Worchestershire sauce, and black pepper and pour the mixture into the casserole. Mix all of the ingredients evenly. Add salt to taste.
  6. Evenly sprinkle the cheese over the mixture and bake, uncovered, for 30 minutes.
  7. Serve.

  5. This is a must try recipe. Sometimes I am looking for an easy but filling dinner option and this Amish Country Casserole fits the bill. Like the idea of using canned soups. Can easily replace the beef with mushrooms.
