These mummy meatballs are a scary good appetizer. They are perfect for serving at your Halloween party or for a fun kids' dinner.
These mummy meatballs are great to bring to a Halloween-themed potluck or party too. Pair them with my mini mummy dogs, breadstick snakes, or deviled Halloween tea eggs.
My taste-testers all loved these meatballs. Instead of as an appetizer, I served them for lunch with roasted fingerling potatoes and a fruit salad with black and orange cookies for dessert. So, while I originally made these meatballs for an appetizer, rest assured, you can make them for lunch, dinner, and even have leftovers for a snack.
I'm sure that kids will love them and even enjoy "helping" with the assembly process.
Ingredients in Mummy Meatballs:
For the Meat: I used a combination of ground beef, ground pork, and bulk Italian sausage.
Bread Crumbs: You can use either plain bread crumbs or Italian seasoned.
Pecorino Romano Cheese: Finely grated.
Dried Italian Seasoning: You could also use dried oregano.
Chile Flakes.
Whole Milk and an Egg: A small amount of milk to moisten the bread crumbs and a beaten egg.
Black Pepper and Salt.
Olive Oil.
Pillsbury Refrigerated Crescent Roll Dough: The kind that comes in a can.
Mustard and Ketchup: Both for dipping and to make the eyes on the meatballs.
To Make These Meatballs:
First, combine the beef, pork, and sausage together in a bowl. Add the bread crumbs, cheese, milk, Italian seasoning, chile flakes, salt, and black pepper and combine with your hands. Add the olive oil and the egg and incorporate them into the mixture.
Next, form the mixture into balls, two tablespoons each. I used a #30 cookie scoop to keep the meatballs the same size. Place the uncooked meatballs on quarter sheet pans, cover them with plastic wrap, and place them in the freezer for at least two hours. You can also freeze them overnight and finish assembling and baking them the next day.
After that, cut the crescent roll dough into strips and stretch it to wrap each meatball like a mummy. Be sure to pinch together the seams that are etched into the dough to make crescent rolls.
I cut the dough into strips about 1/4 to 3/8 inch wide and stretched it out before wrapping the meatballs. One strip per meatball seemed to work. I ended up having about a quarter of the dough left over.
Finally, bake the meatballs in a 400 degree F oven for about 25 minutes.
Once you've baked the meatballs, let them cool enough to handle and then dot them with mustard or ketchup to look like eyes peeking out from behind the bandages. I used toothpicks to dot the meatballs, but you could also use a squeeze bottle to add the eyes.
Serve plain, with ketchup, barbecue sauce, or marinara sauce for dipping.
Equipment You May Need:
Two tablespoon cookie scoop: For portioning the seasoned ground meat.
Quarter sheet pan: For freezing the meatballs before baking.
Half sheet pan: For baking the meat balls.
Pizza wheel cutter: for cutting the dough into strips.
Recipe Variations:
For the eyes, you could use candy eyes. Of course, they would need to be removed before eating.
Another option would be to cut black olives into small circles with a straw and "glue" them to the meatball with ricotta cheese, ketchup, or mustard.
While I haven't tried it, you could use cooked noodles instead of the bread dough.
