Parmesan Thyme Popcorn with Browned Butter

This parmesan thyme popcorn with browned butter recipe is a great way to dress up plain popcorn for a party.

 This popcorn is lightly buttered with browned butter flavored with minced garlic and fresh thyme and then tossed with freshly grated Parmesan cheese. 

The browned butter brings a complex flavor to the usual melted butter on popcorn. It's also fabulous in sweets such as browned butter chocolate chunk candy cookies

Because you are making just a small amount of butter, the process to brown it will go pretty quickly. Watch it very closely and use a light colored pan so that you can see the butter changing color. When the butter is a medium brown, remove it from the heat, stir in the garlic and thyme, and pour the butter into a bowl to stop the cooking.

Ingredients in this Popcorn:

Popcorn: You will need the amount of popcorn that about 1/2 cup of unpopped kernels makes, or about 14 cups of popped popcorn. I made this popcorn in the stovetop in a wok, using 3 tablespoons of oil. 

Butter: You will need just 3 tablespoons of butter that you will brown and then add flavorings before tossing it into the popcorn. 

Garlic and Thyme: Mince both and then stir them into the browned butter. 

Parmesan: Freshly grated. 

Salt and Pepper: For the pepper, I used cracked tellicherry pepper.

To Make this Popcorn:

First, brown the butter, stirring regularly over medium heat. Add the minced garlic and minced thyme and pour the butter into a bowl. Set it asided. 

Next, pop the popcorn and then toss it with the browned butter.

Finally, toss the popcorn with the grated Parmesan and finish with salt and pepper.

In the photographs, it's difficult to see the added ingredients, but, rest assured, they add a lot of flavor to the popcorn. 

Recipe Variation:

You can substitute different herbs for the thyme, such as rosemary, herbs de Provence, or sage. For the garlic, you could substitute minced shallots.

Ingredients

  • 3 tablespoons butter
  • 1 clove garlic, minced
  • 1/2 teaspoon minced fresh thyme
  • 14 cups freshly popped plain popcorn
  • 3 tablespoons freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a small stainless steel saucepan, brown the butter over medium heat, stirring regularly, until the butter has browned. Remove the pan from the heat and stir in the garlic and thyme. Pour the mixture into a heatproof bowl.
  2. Pop the popcorn and add it to a large bowl. Pour the butter mixture over the popcorn and toss everything together. Sprinkle with the Parmesan and stir again.
  3. Finish by sprinkling with salt and pepper to taste.
