These Freezer Breakfast Burritos, filled with eggs, sausage, cheese, refried beans, Tater Tots, and salsa, will make your weekday mornings so much easier.

Make these Make-ahead freezer breakfast burritos over the weekend for the best breakfast all week long. They are a hearty and delicious way to start the day. If you think you'd get bored with a breakfast burrito every morning (I sure wouldn't), just alternate them with these freezer breakfast sandwiches.

Breakfast Burritos Shopping List:


  • Tater Tots (my all time favorite packaged food)
  • Canned refried bean - I used ranchero-style, which are just a little spicier
  • Breakfast sausage links - the kind that are about 5 inches long. If you use sausage patties, I'm sure they'd be just as good. 
  • Half and half (or just mix cream and milk)
  • Eggs
  • Shredded cheddar or Monterey Jack cheese. I used a mix of cheddar and pepper Jack cheese. 
  • Pico de gallo (Fresh tomato salsa)
  • Fresh cilantro
  • Eggs
  • 8 or 10-inch flour tortillas.

How to Prepare Make-ahead Freezer Breakfast Burritos:


First, bake the Tater Tots according to the package instructions. I like to make a few extra for a snack because I love them so much.
While the potatoes are baking, cook the breakfast sausage and drain it on paper towels.
Next, prepare the eggs by whisking them with the half and half and gently cooking them in a skillet.
Spread the beans over the the center of the tortillas, top the beans with the Tater Tots, sausage, eggs, cheese, salsa, and cilantro, and roll up the ingredients into burritos.
Bake the burritos, seam side down, in a 400 degree F oven and bake them for about 15 minutes. Let them cool and then wrap them in foil for freezing. Place the burritos in a freezer bag before placing them in the freezer.

Freezer Breakfast Burrito Recipe Variations:


For the cheese, you can use a combination of cheddar, Monterey Jack, or pepper Jack.

You can substitute bacon, chorizo, or Italian sausage for the breakfast sausage. If you use Mexican chorizo, cook it first and then add it into eggs as you are scrambling them. 

You can also add chopped red or green bell peppers, onions, scallions, tomatoes, and/or chopped jalapeños to the burritos as well.

How to Reheat Frozen Breakfast Burritos:


The easiest way to reheat these burritos is in the microwave. Remove the foil, wrap the burritos in paper towels, and microwave for about 5 minutes, turning half way. You can also reheat the frozen burritos in the oven at 400 degrees F for about 40 minutes. 

My favorite way to reheat these is to thaw them overnight in the refrigerator and then reheating them in the oven or toaster oven for about 15 minutes with the foil on, and then 5 minutes, with the foil removed to crisp the tortilla.

ingredients:

  • 2 cups frozen Tater Tots
  • 8- 5 inch links of breakfast sausage, such as Farmer John's cut into 1/2 inch pieces
  • 8 large eggs, beaten
  • 1/3 cup milk, half and half, or heavy cream
  • Salt and pepper to taste
  • About 1 cup canned refried beans
  • 8 - 8, 9, or 10 inch or larger thin flour tortillas 
  • 2 cups shredded cheddar cheese, Jack cheese, or a mixture
  • 1/2 cup pico de gallo
  • 1/4 cup chopped fresh cilantro
  • Hot sauce for serving

How to cook Freezer Breakfast Burritos (Make Ahead)

  1. Cook the Tater Tots according to the package directions. Split the Tater Tots in half and set aside. 
  2. In a large skillet, cook the sausage until browned. Remove the sausage from the pan and add a tablespoon of olive oil. 
  3. Whisk the eggs, milk/cream, and salt and pepper, and add the mixture to the same pan. Cook, gently stirring, until the eggs are thickened and just set, about 3 to 5 minutes. 
  4. Slightly char both sides of the tortillas over an open flame or in a skillet to soften. 
  5. Lay out a tortilla and spread with some of the refried beans. Add 1/8th  of the Tater Tots, sausage, eggs, cheese, pico de gallo, and cilantro. 
  6. Fold up the ingredients in the tortillas by folding the left and right corners of the tortilla slightly over the filling. Roll up the tortilla tightly from the bottom to form a cylinder. Place the burritos, seam side down, on a sheet pan. 
  7. Bake the burritos in a 400 degree F oven for 15 minutes. 
  8. Wrap the burritos in foil, place them in a freezer bag, and freeze. 
  9. Thaw frozen burritos overnight in the refrigerator and then microwave for 5 minutes, turning halfway, or bake in a 400 degree F oven for 25 minutes. (See notes above)
  10. Serve with hot sauce
