S'mores Brownies

These S'mores Brownies are so decadent! Top a graham cracker crust with brownies and top the whole thing with gooey toasted marshmallows.

These brownies bring together the flavors of your favorite campfire treat: crunchy graham crackers, chocolate, and toasted marshmallows.

I have a no-bake s'mores bars recipe that is delicious, but the marshmallows don't have that "cooked over an open fire" char or flavor. The marshmallows in these brownies do... and they're sooooo good!

How to make s'mores brownies:


First, you make a graham cracker crust by combining the crumbs with melted butter and sugar, and bake it for 8 to 10 minutes.

Next, you top the crust with brownie batter and bake the brownies.

Finally, you top the brownies with mini marshmallows and broil them until they are lightly browned. Be sure to pay close attention during this stage so that the marshmallows don't burn.

S'mores brownies recipe variations: 


While this recipe calls for brownies made from scratch, you can easily substitute a boxed brownie mix.

You could also stir in about 1/2 cup of chocolate chips into the brownie batter.

You could also sprinkle the top of the toasted marshmallows with more graham cracker pieces to simulate the graham cracker, marshmallow, chocolate s'mores sandwich.

More tips for making these brownies:


Be sure to line the baking pan with foil or parchment paper. It makes it super easy to lift the brownies out of the pan so you can cut them with a large knife.

I tried several ways to cut these brownies, and found that using a large chef's knife or santuko knife sprayed with spray oil worked best. The marshmallows are super sticky and gooey (the point, right?), so cleaning and re-spraying the knife between cuts worked best.

These brownies are best the day they are made. Store leftovers in an air tight container for up to two days.

These S'mores Brownies are so decadent! Top a graham cracker crust with brownies and top the whole thing with gooey toasted marshmallows.

Ingredients:

For the Crust
  • 6 graham crackers, processed into crumbs (3/4 cup)
  • 4 tablespoons butter, melted
  • 1 tablespoons sugar
For the Brownies
  • 8 tablespoons unsalted butter
  • 3 ounces unsweetened chocolate, roughly chopped
  • 3 1/3 ounces (2/3 cup) all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 7 ounces (1 cup) granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups mini marshmallows

Instructions:

To Make the Crust
  1. Heat the oven to 350 degrees F with a rack in the middle of the oven. 
  2. Line an 8-inch square pan with foil or parchment and spray the foil or parchment with spray oil. You will want to use this as a sling to remove the baked brownies out of the pan. 
  3. Mix the graham cracker crumbs, butter, and sugar in a bowl with your fingers and then pour the crumbs into the pan and spread evenly. Press the mixture to flatten into an even layer. 
  4. Bake the crust for 8 to 10 minutes, until firm and lightly browned. 
To Make the Brownies
  1. Microwave the butter and chocolate in a bowl at 50 percent power, stirring at 30 second intervals, for 1 to 3 minutes. Let cool. 
  2. Whisk flour, baking powder, and salt together in a medium bowl. 
  3. In a large bowl, whisk together the sugar, eggs, and vanilla. Add the chocolate mixture and whisk until combined. Fold in the flour mixture with a rubber spatula until just incorporated. 
  4. Add the batter to the pan on top of the graham cracker crust. Smooth the top and bake for 22 to 27 minutes, until a toothpick comes out with a few crumbs attached. 
  5. Remove the pan from the oven and heat the broiler. Top the brownies with a single layer of marshmallows. 
  6. Place the pan back in the oven and broil for 1 to 3 minutes, until the marshmallows are lightly browned. Watch very closely. 
  7. Let the brownies cool completely in the pan on a wire rack. 
  8. Remove the brownies from the pan using the foil or parchment sling. Cut the brownies into 16 squares with a chef's knife sprayed with spray oil, wiping the knife clean between each cut.
