Smoked Salmon Quiche

This smoked salmon quiche recipe is fabulous for lunch with a salad. It's also wonderful for an appetizer and even better for brunch.

 


While quiche seems like such an elegant dish, this smoked salmon quiche is super easy to make. It's a wonderful way to enjoy smoked fish, and you could easily substitute smoked trout or smoked tuna. 

For the crust, you can use a ready made one, or make you favorite savory pie crust recipe. I used a Pillsbury ready made crust (the kind you unroll and press into the pan), which made putting this quiche together a snap!




Ingredients in this smoked salmon:
 

Smoked salmon, of course! I like the kind that looks like a filet. You can also use thinly sliced smoked salmon.

Swiss cheese: Freshly grate your Swiss cheese. If you're feeling luxurious, I hightly recommend trying Gruyère. It's such a delicious and melty cheese. Emmentaler would be delicious too.  

Eggs: There are four eggs in this quiche recipe.

Heavy cream: You beat the eggs and heavy cream together before adding it to the tart or pie dish. 

Fresh dill: Dill and smoked salmon go so well together. If you substitute another smoked fish, you can skip the dill. 

Pie crust: You can make your own or use a store bought crust. 

Salt and pepper!






For the pan, I used a removable bottom quiche pan (affiliate link) with fairly high sides. You can also bake this quiche in a deep dish pie pan or a square cake pan so that you can cut the quiche into squares. 


How to make this salmon quiche:


First, blind bake the crust in the pan with for 15 minutes. 

Next, sprinkle the par-baked crust with the salmon and the Swiss cheese. 

After that, beat the eggs, cream, salt and pepper, and dill together and pour the mixture over the cheese and salmon. 

Finally, bake the quiche for 45 minutes.

Smoked Salmon Quiche Recipe
Yield: 8 servings

This smoked salmon quiche recipe is fabulous for lunch with a salad. It's also wonderful for an appetizer and even better for brunch.

Ingredients:

  • One pie crust round, either your favorite savory recipe or store bought
  • 3 ounces smoked salmon filet, chopped
  • 6 ounces freshly grated Swiss cheese
  • 4 large eggs
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh dill 
  • 1/4 teaspoon salt
  • 1/8 teaspoons freshly ground black pepper

Instructions:

  1. Heat the oven to 325 degrees F. 
  2. Press the pie crust into a 9 1/2 inch quiche pan. Prick the bottom with a fork about 1 to 2 inches apart. 
  3. Line the pan with parchment over the dough and fill with pie weights. 
  4. Bake the crust for 15 minutes and remove from the oven. Remove the paper and pie weights. Increase the oven temperature to 350 degrees F. 
  5. Sprinkle the salmon over the par baked crust, and then sprinkle with the Swiss cheese. 
  6. Whisk together the eggs and cream and then add the dill, salt, and pepper. Pour the mixture over the cheese and salmon in the pan. 
  7. Place the pan in the oven and bake for 45 minutes. Remove from the oven and let cool at least 15 minutes. 
  8. Serve warm or at room temperature. 
  9. Reheat leftovers in a 300 degree oven.

  4. Ohhh I love this - I had no idea how much I'd love smoked salmon and eggs together until I used some of my leftover smoked salmon with scrambled eggs and cream cheese - it was DIVINE. This sounds wonderful!
