Tomato and Boursin Bruschetta

This tomato and Boursin bruschetta is a super easy to pull together when you need a tasty appetizer in a flash.

This appetizer is wonderful for this time of year, especially with New Year's Eve coming and with football season going strong. Plus, sometimes you just need a quick snack for when friends drop by or for bringing to a get together. 

Our Sunday Funday theme this week is "quick appetizers using kitchen staples," i.e. using ingredients you typically have on hand, in this case, crusty baguettes, olive oil, garlic cloves, Boursin cheese, and a fresh tomato and basil sauce.

Ingredients You Will Need:

Crusty Bread: You can either make your own baguettes, French bread, or stirato, or pick up crusty bread. I had a couple of 10 ounce La Brea Bakery baguettes in the freezer, which were perfect for putting together this appetizer. 

Olive Oil, Fresh Garlic Cloves, and Salt: To make the bruschetta slices. 

Boursin Cheese: Boursin is a French cheese that is soft and spreadable. It comes in several flavors. For this appetizer, I used the garlic and fine herbs flavor, which is the most readily available and goes super well with the bread and the tomato sauce. 

Tomato Bruschetta Sauce: You can make your own and keep it on hand. For this appetizer, I used the one that Trader Joe's carries. It's really good and goes so nicely with the Boursin cheese. I usually keep it in the refrigerator (I love it on toast and eggs for breakfast). It's pretty handy this time of year when fresh, ripe tomatoes are harder to find. 

Sadly, Trader Joe's is famous for sometimes discontinuing products that you might fall in love with, but, in case that happens, making your own sauce is super easy.

To Make the Bruschetta:

Bruschetta (pronounced brew-sked-da) is crusty bread that has been toasted, brushed with olive oil, rubbed with garlic, and lightly salted. I used to think it was the tomato sauce and bread combination. 

To make the bruschetta, slice the bread, brush it with olive oil on both sides, and toast it in the broiler, turning the slices over half way through. Once the bread is toasted, rub one side of the toasts with the cut side of a large garlic clove and lightly sprinkle the toasts with salt. 

Keep a very close eye on the bread as it broils so that it does not burn. 

Serving this Bruschetta:

Serve the cheese and the tomatoes in separate bowls and place the toasts in a basket for your guests to enjoy. You can also either spread the cheese in a shallow serving bowl and top it with the tomato sauce, or serve the toasts already topped with the cheese and tomato sauce.

This recipe is similar to my tomato bruschetta recipe but with good store bought baguettes, the addition of the Boursin cheese, and the addition of the Trader Joe's sauce, all in the spirit of using kitchen staples and an emphasis on "quick and easy." Tomato and Boursin Bruschetta

This tomato and Bourin bruschetta is a super easy to pull together when you need a tasty appetizer in a flash. 

Ingredients

  • 2 10 ounce crusty baguettes
  • 1/2 cup extra virgin olive oil
  • 3 to 4 large garlic cloves, cut in half
  • salt
  • 2 5.3 ounce containers of Boursin Garlic and Fine Herbs cheese
  • 1 14 ounce carton of bruschetta sauce (or homemade sauce)

Instructions

  1. Slice the baguettes on an angle into 5/8 inch thick slices. Brush both sides of each slice with the olive oil.
  2. Broil the bread slices on a sheet pan, flipping the toasts half way through. Watch them very closely. Remove the toasts from the broiler and rub one side with a raw garlic half. Sprinkle lightly with salt.
  3. Once the toasts cool, keep then in an airtight container until ready to serve.
  4. Serve with the Boursin and bruschetta tomato sauce.
