Zucchini Cheese Pancakes

These zucchini cheese pancakes are perfect for breakfast, brunch, and even for snacks. You can refrigerate any leftovers and reheat them in the toaster oven.

Zucchini Cheese Pancakes

These cheesy pancakes are delicious hot off the griddle or at room temperature. You can also make them in advance and reheat them in the oven or toaster oven.

I had mine with a little salt and pepper, but you could top them with a little sour cream for a little extra richness.

Zucchini Cheese Pancakes


Yield: 20 small pancakes

ingredients:

  • 4 large eggs, whisked
  • 1/4 cup olive oil
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 to 2 teaspoons salt
  • 2/3 cup (57 grams) chopped scallions (about 1 bunch)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 4 cups (680 grams) coarsely grated zucchini, about one 10 inch zucchini
  • 1 3/4 cups (206 grams) flour
  • 1 cup (113 grams) freshly grated  cheddar or Jack cheese (or a combination of the two cheeses)

How to cook Zucchini Cheese Pancakes

  1. Beat the eggs with the olive oil and salt and pepper. 
  2. Add the scallions, dried herbs, zucchini, and cheese and mix.
  3. Add the flour and stir until just combined.
  4. Heat a griddle or frying pan over medium heat and add a small amount of butter or oil. 
  5. Scoop 1/4 cups of batter onto the griddle and cook the pancake for 3 or 4 minutes, until browned on the bottom. 
  6. Flip the pancakes over and cook for another 3 to 4 minutes, until browned on the other side. 
  7. Continue until you've used all of the batter. 
  8. Serve warm or at room temperature. 
  9. Leftovers can be refrigerated and reheated in the toaster oven.

    1. I made them - didn't have enough flour so I subed 1/2 cup masa harina and halfway through frying I also added one fine-chopped jalapeno - for spicy eaters. I tried fat and thin pancakes, light brown and dark brown - the winner was fat and light brown. These taste so good! A good way to use extra zucchini and hide them away in the freezer for non-zucchini times.
