Oatmeal-Applesauce Cake

This Oatmeal-Applesauce cake is the perfect excuse for having cake for breakfast.

Your first bite of this cake will remind you of taking a bite out of an apple. Your second bite will remind you of a bowl of oatmeal. 

Either way, between the oats and the applesauce in this cake, as well as the cinnamon apple topping, you'll have no trouble justifying serving this cake for breakfast. 

The hardest part is fighting over the cinnamon apple slices. I highly recommend doubling the apple topping recipe so that everyone can take as many slices as they like. Plus, the topping is crazy good over vanilla ice cream.. or on its own. 

I'm kind of nuts about these apples.

For some reason, I've been on an oatmeal kick. Last week I made an amazing toasted oats bread (which is probably the best bread recipe that involves oats ever), after having several oat bread fails. 

And just this week I posted a recipe for yellow cake baked oatmeal... another excuse to have cake for breakfast! 

This cake is super easy to make, plus it stays fresh for at least four days. To serve leftovers, just top a slice with some of the apples and microwave it for about 20 seconds.

Of course you can serve this cake for dessert too. In that case, you might want to add a little whipped cream or vanilla ice cream.... or maybe caramel apple ice cream and a drizzle of caramel sauce. 

For the apple topping, be sure to use apples that are crunchy and tart-sweet, such as Honey Crisp, Pink Lady, or Braeburn. I used Honey Crisp. 

Be sure to peel and cut the apples right before cooking them in a mixture of lemon juice, cinnamon, water, and sugar. 






Because there is already sugar in the batter, be sure to use unsweetened applesauce in the cake. 

Other ingredients include flour, cinnamon, butter, an egg and an egg yolk, quick cooking oats, and vanilla, along with baking powder and a bit of salt. 

To make the oatmeal-applesauce cake:


First, you whisk together the flour with the baking powder, salt, baking powder, and cinnamon.

Next, you beat the butter to get it all creamy, and then beat in in the sugar, and then the eggs. 

After that, you lower the mixer speed and add the oats, flour mixture, applesauce, and vanilla. 

You can either prepare your pan by greasing it and dusting it with flour, or you can just spray it with spray oil and line the bottom with parchment paper, which is what I did. 

Be prepared for a delicious apple and oatmeal treat!

Oatmeal-Applesauce Cake





    Oatmeal-Applesauce Cake

    Oatmeal-Applesauce Cake

    This Oatmeal-Applesauce cake is the perfect excuse for having cake for breakfast.

    Ingredients

    For the Cake
    • 135 grams (1 cup plus two tablespoons) all purpose flour
    • 3/4 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/4 teaspoon ground cinnamon
    • 6 tablespoons unsalted butter, softened
    • 1 room temperature egg
    • 1 room temperature egg yolk
    • 74 grams (3/4 cup) quick-cooking oats
    • 244 grams (1 cup) unsweetened applesauce
    • 3/4 teaspoon vanilla extract
    For the Topping
    • 2 tart-sweet apples, such as Honey Crisp, peeled cored, and cut into ninths
    • 2 tablespoons lemon juice
    • 1/2 cup sugar
    • 1 teaspoon cinnamon
    • 1/4 cup water

    Instructions

    To Make the Cake
    1. Heat your oven to 350 degrees F and grease an 8 inch square cake pan and line the bottom with parchment paper.
    2. In a large measuring cup or a small bowl, whisk together the flour, baking powder, salt, and cinnamon. 
    3. In the bowl of a stand mixer, or using an electric mixer, beat the butter on medium-high speed until creamy. Add the sugar and beat until fluffy, about 4 minutes. 
    4. Add the egg and egg yolk, one at a time, beating each in well. 
    5. Reduce the mixer to low and add the oats and mix until blended. 
    6. Add 1/3 of the flour mixture, 1/2 of the applesauce and mix until just combined. Repeat with the flour and applesauce, ending with the last third of the flour mixture. Add the vanilla and beat for 30 seconds. 
    7. Pour the batter into the pan and smooth the top. Bake for 25 to 30 minutes, until a toothpick comes out almost clean. 
    8. Cool the cake completely in the pan on a wire rack. 
    9. After it's cooled, cover the pan with foil or plastic wrap until ready to serve. 
    For the topping
    1. Add all of the ingredients to a small sauce pan and bring everything to a boil.
    2. Reduce the heat to a simmer and cook for 10 to 12 minutes, until the apples tender-firm. 
    3. Serve warm. 
    4. This topping can easily be reheated in the microwave.

    1. I agree! The perfect excuse for having cake for breakfast! My family really enjoyed this cake--but I have to admit I dished up the servings and gave myself the biggest helping of the apple topping.
