Pumpkin Spice Marshmallows

These pumpkin spice marshmallows taste just like a slice of pumpkin pie!

These pumpkin spice marshmallows take the flavors of your favorite holiday pie and put them in a sweet, squishy, fluffy, puffy treat. 

After attempting marshmallows for the first time and thrilled with the results, I couldn't wait to try more flavors. These pumpkin spice marshmallows, flavored with pumpkin puree, cinnamon, ginger, nutmeg, and vanilla capture all of the deliciousness of a slice of pumpkin pie. 

These marshmallows are especially delicious stirred into a mug of hot chocolate.

Ingredients in Pumpkin Spice Marshmallows:

Unflavored powdered gelatin: You will need 5 teaspoons. I like to empty two to three envelopes into a small bowl and them measure from there. I just put the remainder in an empty spice jar. 

Sugar, light corn syrup, and salt to create a syrup that you bring to a boil and cook until the mixture reaches 250 degrees F. 

Canned pumpkin puree: While I know some folks like to roast their own, definitely use the canned puree for its consistency. Don't accidentally use canned pumpkin pie filling. 

Spices: You can either mix your own pumpkin pie spice with cinnamon, ginger, and nutmeg, or use prepared pumpkin pie spice. 

Pure vanilla extract: You could also use vanilla bean paste. 

Orange gel food coloring: This ingredient is optional, but you only need a drop or two to give your marshmallows that distinctive pumpkin color. 

Confectioner's sugar and corn starch: For sprinking over the finished marshmallows to cure them. For these marshmallows, whisk in some cinnamon for flavoring.

Tips for making homemade marshmallows:

Actually, making marshmallows at home is much easier than I thought. You definitely need a candy thermometer (I like the analog one that you can clip to the side of the pan while the syrup cooks), an electric mixer, and an eight inch square cake pan. Be sure that your cake pan has square sides. 

For the electric mixer, I prefer a stand mixer because this recipe requires a lot of mixing. At least 15 minutes, including slow mixing to keep the gelatin from "gelling" while the syrup is coming to temperature. If you're a master at multitasking and are very patient, then a hand mixer will definitely work. 

To cut the marshmallows, use a large chef's knife so that you can cut and separate them easily. 

These marshmallows must be cured by dusting with a mixture of confectioner's sugar and corn starch. Depending on the ingredients (such as fruit) and the weather, you might have to dust a little more on the marshmallows a day or two later in case they become a little damp.

These pumpkin spice marshmallows taste just like a slice of pumpkin pie!

Ingredients

Blooming the Gelatin
  • 5 teaspoons unflavored powdered gelatin and 1/2 cup water, stirred together in a microwave safe bowl and allowed to sit for 5 minutes or longer. 
For the Syrup
  • 3/4 cup granulated sugar
  • 1/4 cup corn syrup
  • 1/4 cup water
  • 1/4 teaspoons salt
For the Marshmallows
  • 1/4 cup corn syrup
  • All of the gelatin mixture
  • All of the syrup
  • 1/3 cup canned pumpkin puree
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon freshly grated nutmeg
  • 1 teaspoon pure vanilla extract
  • 1 to 2 drops orange gel food coloring (optional)
For Dusting the Marshmallows
  • 1/2 cup confectioner's sugar, 1/3 cup cornstarch, and 1/4 teaspoon cinnamon, whisked together

Instructions

  1. Spray an 8 inch square cake pan with spray oil and set aside. 
  2. In a small bowl, whisk together the pumpkin, the spices, and the vanilla. 
  3. Add the syrup ingedients to a 1 1/2 to 2 quart saucepan and bring to a boil with a candy thermometer clipped to the side, and cook until the mixture reaches 250 degrees F. 
  4. In the meantime, melt the gelled gelatin and water in the microwave for about 30 seconds. 
  5. Add the 1/4 cup of corn syrup and the melted gelatin mixture to the bowl of a stand mixer fitted with the whisk attachment and whisk on low constantly while the syrup is boiling. 
  6. When the syrup reaches 250 degrees F, slowly pour it into the running mixer. Increase the speed to medium and beat for five minutes. It should begin to turn white and foamy.
  7. Increase the speed of the mixer to medium high and mix for five more minutes. 
  8. Switch the mixer to the highest speed and mix for one more minute. 
  9. Add the pumpkin mixture and mix for an additional minute on high. Add the optional food coloring gel and mix for 30 more seconds. 
  10. Mix the ingredients with a rubber spatula to make sure the gel is fully incorporated. 
  11. spread the mixture into the cake pan and smooth with an offset spatula. 
  12. Sprinkle the top generously with some of the dusting mixture and let cure for at least 6 hours. 
  13. Turn the marshmallow slab out onto a cutting board and slice with a chef's knife. 
  14. Dip the cut marshmallows in the dusting mixture on all sides and shake off the excess.
