Apple Cake with a Honey Bourbon Glaze

This apple cake with a honey bourbon glaze is packed with two kinds of apples and glazed twice with a honey bourbon caramel sauce.

This cake is filled with four cups of apple goodness, including two cups of shredded apple, which adds so much moisture to the crumb, and two cups of diced apple. 

This cake tastes just like apple pie! In fact, I may just serve it for holiday dessert topped with a scoop of vanilla ice cream.

What kinds of apples can I use in this cake?

You can use a variety of your favorite apples in this cake, including soft, sweet, tart, or firm. I'm not a fan of softer apples, but if you happen to have some, they are perfect for the shredded apple component. 

I used two types of apples in my cake, Granny Smith for tartness, and Envy for sweetness. Both are firm apples. I used half of each for both shredding and dicing. 

I also left them unpeeled, mostly out of convenience, but you really could not see the red or green apple peels in the cake. Save yourself some time!

Tips for Making this Apple Cake:

This cake is super easy to make. You just need a rubber spatula, two bowls, and a box grater. You don't need an electric mixer! 

To measure the apple, I cut the apples into large slices and then weighed them with an electronic kitchen scale before shredding and dicing them. 

In one bowl, mix the wet ingredients, plus the sugars and shredded apples, and in another bowl, whisk together the flour and other dry ingredients, and then pour the dry ingredients into the wet ingredents and fold them together. Fold in the diced apples, pour everything into the pan, and bake the cake!

After that, you mix an amazing caramel honey bourbon glaze that you brush on the cake.

Helpful Tools:

You will need two bowls (one large, one medium), a rubber spatula, a wire whisk, and a good box grater to make this cake. 

You will also need a 12 cup bundt pan. Mine is the standard one but you can use the swirly one if you have it. The cake didn't really stick at all. 

I actually used my food processor for grating the apples. It really sped things up, but it's not necessary. 

I also used a silicone pastry brush for brushing the glaze on the cake. It's super convenient and prevents the glaze from dripping down the sides and onto the cake plate.

Along with being easy to make, this cake is seriously delicious. 

Once you turn the cake out of the pan, while the cake is still warm, you brush it with half of the honey bourbon glaze. When you are ready to serve the cake (or once it's cooled, brush it with the rest of the glaze.

This apple cake with a honey bourbon glaze is packed with two kinds of apples and glazed twice with a honey bourbon caramel sauce.


For the Cake
  • 1 1/4 cups neutral oil (I used grapeseed oil)
  • 300 grams (1 1/2 cups) granulated sugar
  • 130 grams (2/3 cup) lightly packed brown sugar
  • 3 tablespoons bourbon
  • 2 teaspoons pure vanilla extract
  • 3 large room temperature eggs
  • 300 grams (2 cups packed) shredded apples
  • 300 grams apples cut into a 1/4 inch dice (2 cups)
  • 240 grams (2 cups) all purpose flour, plus 1 tablespoon
  • 130 grams (1 cup) whole wheat flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
For the Glaze
  • 1/4 cup heavy cream
  • 50 grams (1/4 cup granulated sugar)
  • 3 tablespoons honey
  • 2 tablespoons bourbon
  • 1 tablespoon butter


  1. Heat the oven to 325 degrees F with a rack in the middle position and prepare a 12-cup bundt pan for baking for quick release.
  2. In a large bowl, whisk together the oil, sugars, bourbon, vanilla, and eggs. Add the shredded apples and stir.
  3. In a medium bowl, whisk together the flours, cinnamon, baking soda, and salt. Add this mixture to the wet ingredients and fold with a rubber spatula until just combined. Toss the diced apples with the reserved tablespoon of flour and fold them into the batter.
  4. Pour the batter into the prepared pan and tap the pan on the counter a couple of times to let out any excess air.
  5. Bake the cake for 1 hour and 15 minutes and then cool on a wire rack for 15 minutes.
  6. In the meantime, combine the glaze ingredients in a saucepan and bring to a simmer. Cook over medium low heat for 2 minutes. Set aside.
  7. Turn out the cake onto a serving platter and brush with half of the glaze. Once completely cooled, brush with the rest of the glaze.
