These sourdough dinner rolls, super soft and dripping with garlicky butter, Parmesan, and parsley, will be a favorite side for your Thanksgiving or Christmas spread. 

Plus, you can enjoy the leisurely pace of making rolls using your sourdough starter. Yes, these rolls take about seven hours to make from start to finish, but the hands on time is actually about 30 minutes. 

While you're working to prepare the rest of the dishes for your holiday meal, these rolls will be easy to fit into your baking schedule.

There is a lot of flexibility in the timing of making these rolls. 

Make-ahead tips for making sourdough dinner rolls:

You can follow the one-day schedule for making these rolls in about seven hours. 

If you'd like to spread the process over two days. Beginning with the one-day recipe, you mix the dough in a stand mixer and then normally let it rise for about four hours. If you want to postpone the time before baking, you can let the dough rise at room temperature for two hours and then transfer it to the refrigerator to ferment overnight, and then resume with the instructions the next day. 

Alternatively, if you'd like to make these rolls and save them for later, bake them and freeze them fully baked without adding the garlic Parmesan butter. When you are ready to serve them, thaw them and reheat them in a 325 degree F oven for 15 minutes and then brush them with the flavored butter.

I am super thrilled at how light and fluffy these rolls turned out. 

Ingredient Notes:

You will need an active sourdough starter, often referred to as "liquid levain." That means that it is half flour and half water by weight. 

If your starter has been languishing in the refrigerator for awhile, bring it out, reduce it down to about 2 ounces by weight, and feed it with about 4 ounces each of flour and water (by weight) a couple of times at 12 hour intervals to get it active. The best time to use your starter is when it is active and bubbly. 

You will also need warm whole milk, sugar, kosher salt, and all purpose flour. 

For the butter in the dough, make sure it is softened but not melty. Slightly softened butter will blend the best into the dough.

For the garlic Parmesan, use freshly grated cheese, granulated garlic or garlic powder, and fresh parsley, along with melted salted butter.

Shaping The Dinner Rolls:

Divide the dough into 15 pieces. I usually weigh the dough and calculate the amount for each roll. 

Flatten each piece of dough into a disk and fold the edges up over the middle like you would a mini boule. Flip it over and swirl it under your cupped hand, rolling it in circles to form a ball. 

Place the balls, seam side down, into the cake pan.

If you have leftovers, store them in an airtight container and reheat them briefly in the oven at about 325 degrees F. 

They will feel a bit heavy when they are cold the next day, but once reheated, they will feel and taste much lighter and fresher.

I love the light and fluffy interior of these rolls. They really don't need anything else. 

Helpful Tools:

You will need a stand mixer for kneading the dough. The dough is pretty sticky and would be really difficult to knead by hand. You definitely can try if you can handle sticky dough, but you don't want to add too much extra flour. 

You will also need a nine inch by 13 inch cake pan for baking the rolls. You can either line it with parchment paper or spray it with nonstick spray oil. I like using parchment because it makes it so easy to lift the baked rolls out of the pan to cool.

These rolls are so perfect for holiday dinners. You'll love them with prime rib, pasta, turkey, leg of lamb, or chicken. They are also wonderful in the summer for a backyard barbecue.

    Garlic Parmesan Sourdough Dinner Rolls - grace your holiday table with a basket of these amazing rolls.

    Ingredients

    For the Rolls
    • 1 cup whole milk, heated to 110 degrees F.
    • 113 grams (1/2 cup) sourdough starter
    • 85 grams (6 tablespoons) room temperature unsalted butter
    • 25 grams (2 tablespoons) granulated sugar
    • 1 1/2 teaspoon kosher salt
    • 360 grams (3 cups) unbleached all purpose flour, plus 1 to 3 more tablespoons if needed to bring the dough together
    For the Garlic Parmesan Butter
    • 1/2 cup salted butter, melted
    • 1teaspoon granulated garlic
    • 2 tablespoons minced fresh parsley
    • 1/4 cup freshly grated Parmesan cheese

    Instructions

    1. In the bowl of a stand mixer, add all of the dough ingredients. Mix on low with the dough hook for about 2 minutes.
    2. Increase the mixer speed to medium and mix for about 10 minutes, until the dough comes together and begins to cling to the dough hook and clear the bowl. The dough should be very sticky but cohesive. Add more flour by tablespoon, no more than three, if necessary.
    3. Let rise in a covered oiled bowl or bucket for about 4 hours. The dough should rise, but not necessarily double.
    4. Chill the dough for 30 minutes prior to shaping.
    5. Divide the dough into 15 equal-sized pieces and form each into a ball.
    6. Prepare a 9 inch by 13 inch cake pan with spray oil or parchment and place the dough balls into the pan in a 3 by 5 pattern. Cover and let rise for about 2 /12 hours, until doubled.
    7. Heat the oven to 375 degrees F and bake the rolls for about 25 minutes.
    8. While the rolls are baking, mix the butter, garlic powder, parsley, and Parmesan. When the rolls emerge from the oven, brush them generously with the mixture.
    9. Move the rolls to a wire rack to cool for 5 minutes before serving.
