Creamy Steel Cut Oatmeal with Apple Raisin Compote made in the Instant Pot

The apple raisin compote adds just the right amount of sweetness to the oatmeal, and the steel cut oats will help you get lots of fiber and protein into your diet and will carry you through to lunchtime.

The Instant Pot can be intimidating with all of its buttons and settings. This recipe makes it really simple to figure out. I didn't even have to use the manual!

This Instant Pot oatmeal was really creamy and totally delicious with the apple raisin compote.

Does this recipe produce more oatmeal than you need? This is also a great make-ahead recipe. Just be sure to cover and refrigerate any leftovers. All you have to do is add some milk and leftover oatmeal to a bowl, give the bowl a minute or two turn in the microwave, and stir. Add some of the compote if you still have some, and enjoy. Easy peasy.

If you've been intimidated by steel cut oats, and don't want to babysit a pot on the stove or risk burning the bottom of the oats in the pan, you definitely need to try making them in a pressure cooker. As the book mentions, this recipe is kind of a cross between apple pie and oatmeal!

Instant Pot Creamy Steel Cut Oatmeal with Apple Raisin Compote

ingredients

For the Compote
  • 1 tart apple, such as Granny Smith
  • 1 sweet apple, such as Golden Delicious (I used an Envy apple)
  • 3 tablespoons raisins
  • 1/2 cup orange juice (or apple juice)
  • 2 teaspoons lemon juice
  • 2 tablespoons brown sugar
  • 2 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon lemon zest
For the Oatmeal
  • Butter, for greasing
  • 3 cups (705 ml) water
  • 2 cups (470 ml) milk
  • 2 cups (320 grams) steel cut oats
  • Generous pinch of salt

instructions

To Make the Compote
  1. Peel and core the apples and cut them into small chunks. Place them into a saucepan. Add the raisins, orange juice, lemon juice, brown sugar, maple syrup, cinnamon, vanilla, and lemon zest. Stir to combine, and cook over medium heat until the mixture is syrupy. Set aside. 
To Make the Oatmeal
  1. Lightly butter the inner pot of your pressure cooker. 
  2. Add the water, milk, oats, and salt. Do not stir. 
  3. Close and lock the lid and close the steam release valve. 
  4. Cook on high pressure for 9 minutes. When done, release the pressure naturally. This should take 15 minutes. Turn the steam release valve to vent, releasing any remaining steam. 
  5. Unlock and open the lid carefully. Serve in bowls topped with the compote.

  4. Intriguing recipe, and nice to use the PC for it = or IP... I did not grow up eating oatmeal, and confess that I maybe had it once or twice in my life

    this recipe with the compote might be something I can enjoy!

    1. At one time, oatmeal was supposed to be a miracle food for your heart health. Not sure if that is still true, or went by the wayside with egg white omelettes. Either way, the apple raisin compote and the oats together are delicious!
