Halloween Stuffed Chocolate Whoopie Pies

These Chocolate Whoopie Pies with buttercream filling are like little inside out cupcakes... cake on the outside and frosting in the middle!

These delicious and chocolatey Halloween Stuffed Chocolate Whoopie Pies also have a little surprise in the middle, a heaping teaspoonful of chocolate syrup ready to ooze out of the little cakes.

These little cakes are soft and moist, and are the perfect vehicle for delivering the light and fluffy frosting that is piped around the sides.

Plus, there's sprinkles!!! They make everything wonderful!

What is a whoopie pie? 


A whoopie pie looks like a sandwich cookie, but it is actually cake sandwiching fluffy frosting.

It is traditionally two little mounds of chocolate cake with a filling made from Marshmallow Fluff, shortening, and confectioners sugar. Its origins include Pennsylvania, New Hampshire, and Maine, all of which claim to be the originating U.S. state. I'm not going to get in the middle of that argument.

They are also called gobs, according the the book Whoopie Pies: Dozens of Mix 'em, Match 'em, Eat 'em Up Recipes.  

They reportedly are Amish in origin, and get their name when Amish children opened their lunch boxes and exclaimed "whoopie" when finding these treats at lunch.

On the northeast coast of the U.S., these are super popular, and are even sold wrapped in cellophane in gas stations!

Marshmallow Fluff is hard to find on the west coast where I live, so I made a vanilla buttercream to fill these little cakes. Plus, these little cakes totally lend themselves to customization. As long as you include a fluffy whipped filling, you can still call these whoopie pies in my book.

Can you make these whoopie pies in advance?


You can make the cakes in advance, cool them, wrap them, and freeze them until you are ready to assemble them. You can also make the frosting and refrigerate it for a few days. 

Tools you will need to make these whoopie pies:


I used a size 40 cookie scoop to portion out the batter onto my favorite parchment lined baking sheets. You'll also need a piping bag and decorator tip. 

The mixture for these whoopie pies is sort of a blend between batter and dough (but more like batter). As you portion it out, it will stand up on the baking sheet. There is no need to flatten it before baking as it will spread (but not too much) during baking.

Storage Tips for Whoopie Pies:


Whoopie pies are kind of hard to store, because they stick together if you stack them. After all, they are cake! If you can, find a shallow storage container where you can store them in a single layer. If that's not practical, store them separated by layers of wax paper. 

Definitely store them in a covered container in the refrigerator and bring them to room temperature before serving. 

In an ideal world, you won't have leftovers!

For these whoopie pies, I used ingredients from our Halloween Treats Week sponsors, including Sweets and Treats (sprinkles), Adams Extracts (vanilla and food coloring), Litehouse (Chocolate Dips), and Dixie Crystals (sugar). 


How to Make These Whoopie Pies:


First, you make the batter for the cakes. Next, you bake the mini cakes and let them cool.

After that, you pipe whipped buttercream around the edges of one of the cakes and drop a dollop of chocolate dip/syrup in the middle. 

Next, you top the cake with another cake half and sprinkle the outsides with sprinkles.

Halloween Stuffed Chocolate Whoopie Pies Recipe

ingredients:

  • 1 cup (5 ounces) all purpose flour
  • 1/4 cup (5/8 ounces) cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 cup packed light brown sugar
  • 4 tablespoons unsalted butter, room temperature
  • 1 large egg
  • 1/4 teaspoon vanilla
  • 1/2 cup milk
  • 1 1/2 cups whipped buttercream frosting of your choice
  • 12 drops orange food coloring
  • 1/4 ounces chocolate syrup or dip
  • 1/2 cup sprinkles

How to cook Halloween Stuffed Chocolate Whoopie Pies Recipe

  1. Heat your oven to 375 degrees F. Line two baking sheets with parchment paper. 
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. 
  3. In the bowl of a stand mixer, mix the butter and brown sugar on high speed for 3 minutes. Scrape down the sides of the bowl and mix on high speed for another minute. 
  4. Beat in the egg and vanilla. 
  5. Add 1/3 of the flour mixture and mix for 30 seconds. Add 1/2 of the milk and mix for 30 seconds. Add 1/3 of the flour mixture and mix for 30 seconds. Add the rest of the milk and mix for 30 seconds. Add the rest of the flour and mix for 30 seconds. 
  6. Continue blending the mixture with a rubber spatula until just mixed. 
  7. Using a #40 ice cream scoop (about 2 tablespoons), portion/scoop the batter out, 2 inches apart, onto the two baking sheets. 
  8. Bake the cakes, one baking sheet at a time, for about 8 minutes, until tops are set and lightly spring back when lightly pressed. 
  9. Let cool on the pans for 5 minutes. Move to a wire rack to cool completely. 
  10. Mix the whipped buttercream with the orange food coloring. 
  11. Using a pastry bag, pipe the buttercream around the flat sides of of 5 whoopie pie halves. 
  12. Spoon chocolate syrup into the middle and sandwich with another whoopie pie half. 
  13. Sprinkle the edges of the frosting with sprinkles.

  10. It says 1 cup (5 ounces) flour. Does this mean 5 measuring cups? One cup is 8oz. I’m confused!

    1. It's 5 ounces by weight. I like to use a scale because it's more accurate with flour.
