I love omelets (or omelettes if you're French). You can make them with savory fillings, sweet fillings, or just roll them up like the French do, and sprinkle them with chives.

This recipe reminds me of sous vide egg bites. The advantage is that this mug omelet is much easier if you need to make a single serving.

I was kind of inspired by little containers I found in the egg section of my grocery store that contain things like bacon, sausage, cheese, herbs, and veggies, where all you have to do is add an egg. I was pretty sure recreating one of these wouldn't be that hard, a lot fresher, and more delicious!

Coffee Mug Omelet Ingredient List: 


  • 2 eggs
  • 2 cooked breakfast sausages, sliced
  • 1 tablespoon of milk or cream
  • 1 tablespoon of cheddar cheese
  • 1 tablespoon of finely chopped red bell peppers
  • 1 teaspoon of finely chopped chives or scallions
  • A pinch of salt and pepper
You will also need some baking spray and a 12 ounce coffee mug.

How to Make Coffee Mug Omelets:


First, whisk the eggs and milk in a coffee mug. Next, stir in the salt and pepper, cheese, bell peppers, chives, and sausage. 

After that, begin microwaving the mug in 30 second intervals, stirring between each interval, continuing until the mixture is just set.


Coffee Mug Omelet Recipe variations: 


Recipe variations include adding hash browned potatoes, cooked bacon, ham, spinach, mushrooms, onions, and other vegetables.

You could also use different types of cheeses, depending on the rest of the ingredients. For example, if you add spinach, use Swiss or Gruyère cheese.

You could also add French Toast and maple syrup for a sweet variation.

  • 2 eggs, lightly whisked
  • 1 tablespoon milk
  • 1 tablespoon grated cheddar cheese
  • 1 tablespoon finely chopped red bell pepper
  • 1 teaspoon finely chopped chives
  • Pinch of salt and pepper
  • 2 fully cooked breakfast sausages, sliced

instructions:

How to cook Coffee Mug Omelet with Sausage, Peppers, and Cheese

  1. Spray a 12 ounce coffee mug with spray oil. 
  2. Add the whisked eggs. 
  3. Whisk in the milk, cheese, bell pepper, chives, and salt and pepper. 
  4. Drop in the sliced sausage and stir. 
  5. Microwave the mug in 30 second intervals, stirring in between each interval. 
  6. Continue until the eggs are fully set. This should take no more than 3 minutes, and probably less. 
  7. Serve immediately.

  5. I love mug recipes a whole lot. I used to make my husband little mason jar scrambles where I would divi up the ingredients in the beginning of the week and he would crack an egg into it the morning of and nuke it. So easy to do!

  6. I have done this several times since I first saw it and have used chopped up ham and finely diced onion. Two minutes and 15 seconds is just about the right amount of time. I use a tablespoon of whipping cream and it really lightens up the eggs. It is a great quick breakfast and very filling for a low carb diet. Thank you for sharing it.
