Mini Peach Cobblers

When you have fresh sweet peaches available, be sure to make these little peach cobblers.

These mini peach cobblers are a breeze to make too! Just mix the peaches with some brown sugar, nutmeg, and lemon zest, and divide them among 8 mini ramekins. Top them with an easy to make biscuit dough, and bake!

You can even prep the biscuit dough in advance and keep it in the refrigerator for up to three days, making these cobblers even easier to make.

If you don't have mini ramekins, you can bake them in four 4-inch ramekins. The baking time should be about the same.

Peeling Peaches:


An easy way to peel peaches is to cut a small X in the peel at the bottom of the fruit and then plunge them into boiling water for one minute. Next put them in a bowl of cold water to stop the cooking.

Finding good peaches:


It's sometimes so hard to find good peaches at the supermarket. It seems like they sometimes go from rock hard to mealy with nothing in between. I have found one grocery store that sells only local produce, and their peaches are always juicy and sweet after a couple of days on the counter.

You can usually find great peaches at farmers markets, but we only have one once a week.

Can I substitute other fruit?


Yes, you can! Plums, apricots, and nectarines will all work with this recipe. You don't even need to peel them.

Mini Peach Cobblers

When you have fresh sweet peaches available, be sure to make these little peach cobblers.

Ingredients:

For the Peach Filling
  • 1 pound fresh peaches, peeled and cut into bit-sized pieces (1/2 inch slices cut into thirds). 
  • 2 tablespoons packed light brown sugar
  • 1/4 teaspoon grated nutmeg
  • Lemon zest from 1/2 of a large lemon
  • 1 teaspoon lemon juice
  • 2 tablespoons butter, softened
For the Biscuit Topping Dough
  • 2 1/4 ounces (1/2 cup) all purpose flour
  • 1/2 ounce (1 tablespoon plus one teaspoon) granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 3 tablespoons cold unsalted butter, cut into small cubes. 

Instructions:

To Make the Peach Filling
  1. Place the cut peaches in a medium bowl. Add the brown sugar, nutmeg, lemon zest, and lemon juice and stir. 
  2. Divide the filling among 8 two and a half inch ramekins or among 4 four inch ramekins. 
  3. Dot the peaches with the softened butter. 
To make the Biscuit Topping and Baking the Cobblers
  1. Heat the oven to 375 degrees F and place 8 mini or 4 regular sized ramekins on a baking sheet or in a casserole dish.
  2. In the bowl of a food processor, process the flour, 2 tablespoons of the sugar, baking powder, nutmeg, and salt.
  3. Add the cold butter cubes and pulse until the butter is cut into tiny pieces.
  4. Evenly divide the topping among the ramekins.
  5. Bake the cobblers for 30 to 35 minutes.
  6. Transfer to a rack to cool.
  7. Serve warm with whipped cream or ice cream.
