Marbled Ube Cookies

These marbled ube cookies start with a vanilla dough, half of which is flavored with ube, a yam with a sweet subtly vanilla flavor and a bright purple color. 



These cookies are soft and chewy. They also have a bit of crunch from a generous topping of festive sprinkles! 

They get much of their flavor and color from ube yam. I used ube powder and extract, which is easier to find in the U.S., especially in Asian grocery stores. 

I had some ube powder and extract on hand from making ube pandesal (a filipino bread) and I wanted to try using it in a dessert. Plus, I thought it might be fun to have a very purple Christmas cookie!



The process to make these cookies is a liittle different in that you bake the dough on a baking sheet and then cut the baked dough into the shapes you want. This is because the dough is super buttery and will not hold its shape in the oven if you cut it before baking. 

Ingredients in These Cookies:

From your Pantry: Flour, sugar, baking powder, baking soda, salt, and vanilla extract. 

From the Fridge: Unsalted butter and a large egg. 

Ube Powder and Ube Extract: You can typically find these in an Asian market. If you can't find the powder, you can use just the extract as the color is very strong. 

Note: Ube is not the same thing as purple sweet potato. 

Sprinkles: Optional, but a fun way to dress up these cookies, especially for the holidays. I used a mix of wintry shapes and colors from Sprinkle Pop



To Make These Cookies:

First, beat the butter and sugar together in a stand mixer and then beat in the egg and the vanilla. 

In another bowl, whisk together the flour, baking powder, baking soda, and salt and then beat the flour mixture into the butter mixture. Divide the dough in half and add the ube powder and extract to one half of the dough. 

Next, gather all of the dough together into heaping tablespoon sized pieces and then place them randomly on a parchment lined baking sheet. Press them down and into each other so that you have a marble effect and then decorate with sprinkles. Bake the sheet of dough for about 15 minutes. 

Finally, remove the baking sheet from the oven and let it cool on the pan for about five minutes. Then, using round cookie cutters, cut into the dough to create round cookies. Cool the cookies on a wire rack. 



I used a set of round cookie cutters. I cut larger cookies first and then cut smaller ones in the spaces that were left to minimize the amount of dough that was left. There was actually very little waste, just enough for the baker to taste test. 



Tips:

When pressing the dough onto the baking sheet, try not to blend the two doughs. You want, if possible, to have distinct borders between the white and purple doughs. 

Don't worry too much about overly flattening the dough onto the baking sheet. There is no need to use a rolling pin. Using just your hands or the bottom of a measuring cup to press down on the dough is sufficient. 

Do not chill the dough before baking. This is one case where you want it to spread.

These marbled ube cookies start with a vanilla dough, half of which is flavored with ube, a yam with a sweet subtly vanilla flavor and a bright purple color. 

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (270 grams) all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons ube powder
  • 2 teaspoons ube extract
  • 2 to 3 tablespoons of sprinkles, optional

Instructions

  1. Heat your oven to 350 degrees F and line a baking sheet (half sheet pan), with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and the sugar until fluffy. Beat in the egg and the vanilla.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Add the mixture to the butter mixture and beat on low until just combined.
  4. Remove half of the dough from the mixer bowl and set it aside. Add the ube powder and and ube extract and beat on low until fully combined.
  5. Divide each half of the dough into about 10 pieces and place them randomly on the baking sheet. Press them down and into each other so that the dough is flat and the colors are slightly marbled. Decorate with optional sprinkles.
  6. Bake the dough for about 15 minutes. Remove the pan from the oven and let the dough cool on the pan for five minutes. Using various round cookie cutters, cut circles into the dough. Remove the cut cookies to a cooling rack to cool completely.
