Blueberry Banana Oat Breakfast Muffins

These Blueberry Banana Oat Breakfast Muffins are loaded with almost everything you want for breakfast in a portable little package.

These muffins are super moist from the ripe bananas in the batter, and they are loaded with lots of rolled oats and fresh blueberries.

These muffins are perfect for using up overripe bananas... the softer the better for super moist muffins.

Blueberry Banana Oat Muffins




Ingredients you will need for these blueberry banana muffins:


You probably have most of the ingredients on hand, all purpose flour, rolled oats, sugar, baking powder, salt, butter, eggs, vanilla, and ripe bananas. All you'll need is some fresh blueberries and you're all set. I'm pretty sure other berries would work too.

You'll also need a 12 cavity muffin tin. I'm a big fan of ones with a quick release finish (affiliate link).  I also like to use an ice cream scoop to portion the batter among the muffin tin cavities. 


How to Make Blueberry Banana Oat Muffins:


These muffins are super easy to make. First, you stir together the dry ingredients along with half of the blueberries. 

ext, you mix together the wet ingredients, including the mashed bananas. After that, you portion the batter among the muffin tin cavities, and top them with the rest of the blueberries. 

Finally, you bake these muffins for about 18 minutes. 

You can serve these muffins while they are still warm or serve them at room temperature. Store them in an air tight container at room temperature for up to 3 days.

ingredients:

  • 1 1/2 cups (7 1/2 ounces) all purpose flour
  • 3/4 cup rolled oats
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 1/4 cups blueberries, divided
  • 1 cup mashed overripe bananas (about 2 medium bananas)
  • 6 tablespoons unsalted butter, melted
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla

instructions:

How to cook Blueberry Banana Oat Breakfast Muffins

  1. Heat the oven to 400 degrees F. 
  2. Spray a 12 cup muffin pan with spray oil, or grease with butter. 
  3. In a medium  bowl, whisk together the flour, oats, sugar, baking powder, and salt. Stir in 3/4 cup of the blueberries. 
  4. In another medium bowl, mix the bananas, melted butter, egg, and vanilla. 
  5. Add the wet ingredients to the dry ingredients and fold together until just combined. 
  6. Divide the batter among the muffin cavities (about 1/2 cup per muffin). Top the muffins with the rest of the blueberries, dividing them evenly among the 12 muffins. 
  7. Bake the muffins for about 18 minutes, until a toothpick comes out clean. 
  8. Cool the muffins in the pan on a wire rack for 5 minutes, then de-pan the muffins and continue cooling them on the wire rack. Serve warm or at room temperature.
