This coconut panna cotta with fresh berries is a lightened up version of the amazing delicious dessert of dairy thickened with gelatin. It's origins are Italian, and the name is loosely translated to "cooked cream."

Typically, panna cotta recipes include heavy cream, half and half, sugar, and flavorings such as vanilla. You can mold it and turn it out onto dishes for serving, or simply serve it in pretty bowls, glasses. or ramekins.

It's so easy to make. You could characterize it as "jello meets pudding," and it's one of the easiest make ahead elegant desserts.

This version of panna cotta is so much lighter than the traditional version. Instead of the heavy cream and half and half, the ingredients include coconut milk beverage, light coconut milk, and honey.

Coconut Panna Cotta Shopping List:


  • Unsweetened coconut milk beverage: This is usually found in the refrigerated section of your grocery store. My local Ralph's did not carry it, but I was able to find it in Trader Joes. It's an interesting ingredient, in that it looks like milk, but has a very watery flavor. I'm still trying to figure out how to use the rest of the beverage.
  • Unflavored gelatin: if you are vegetarian or vegan, you can try agar agar, but I cannot vouch for it in this recipe because I have not tried it. 
  • Canned light coconut milk
  • Honey and Kosher salt
  • Raspberries and grated lime zest

How to Make Coconut Panna Cotta: 



First, pour the coconut milk beverage into a sauce pan and sprinkle it with the gelatin. Let the mixture sit until the gelatin begins to dissolve. 

Turn on the heat under the pan and whisk the gelatin and coconut milk beverage together, but don't let the mixture come to a boil. 

Add the light coconut milk, honey and some salt, and cook, whisking constantly, until thickened. Again, do not let the mixture boil. 

Transfer the mixture to a metal mixing bowl and plunge the bowl into an ice water filled larger bowl, and stir the mixture constantly until thickened, about 12 minutes.

Finally, ladle the mixture to ramekins or serving glasses, cover with plastic wrap, and chill for at least 4 hours.

ingredients:

  • 3/4 cup unsweetened coconut milk beverage
  • 3 1/2 teaspoons unflavored gelatin powder
  • 2 cups canned light coconut milk
  • 1/4 cup to 1/4 cup plus 2 tablespoons honey (depending on the level of sweetness you want)
  • 1 teaspoon vanilla
  • Kosher salt
  • 1 cup raspberries
  • 1 tablespoon lime zest

instructions:

How to cook Coconut Panna Cotta with Fresh Berries

  1. Add the coconut milk beverage to a medium saucepan and sprinkle the gelatin over the top. Let the mixture sit for about 10 to 15 minutes to let the gelatin bloom.
  2. Fill a large bowl with ice water and set aside. 
  3. Begin to heat the saucepan over medium heat and whisk the mixture for about 3 minutes. Do not allow the mixture to boil. 
  4. Add the coconut milk, honey, vanilla, and a pinch of Kosher salt. Continue whisking the ingredients for 4 to 5 minutes. Do not bring to a boil. 
  5. Pour the mixture into a medium metal bowl and then place the bowl into the ice water bath. Whisk slowly for about 12 minutes, until the mixture begins to thicken.
  6. Divide the mixture among six ramekins, cover with plastic wrap, and chill overnight. 
  7. Serve sprinkled with lime zest and fresh berries.

  1. Oh my Karen, I make something similar with milk and almond extract but this sounds amazing with this coconut flavor. It wouldn't last long in my house for sure.

  6. Panna cotta is always such a healthy go to dessert. You can make it with almost any kind of milk or milk product, soy milk, almond milk, you name it.
