Date, Prune, and Dried Cherry Muffins

These dried fruit muffins are loaded with dates, prunes, and dried cherries that have been macerated in warm apple juice to make the fruit soft and juicy.

If you're looking for a fruit-filled muffin to start your day, these muffins are for you. Plus, these muffins were a great way to clear out some dried fruit that I had in my pantry from other recipes. I had dates leftover from making a date and roiboos cake, and prunes leftover from making a slow cooker Chicken Marbella

I also had some unopened dried cherries from a gift. You can also use apricots, dried figs, dried mango, or other dried fruit. 

These muffins are are so easy to make. Once you have softened the fruit in juice, which will take about an hour, these muffins will take only about 10 minutes to mix, and about 20 minutes to bake.

These muffins pair well with coffee, tea, or juice, and are delicious reheated for a few seconds in the microwave and buttered. 

Besides the fruit, these muffins include apple or white grape juice for steeping the fruit. I used white grape juice because that's what we had in the refrigerator. 

You will also need orange zest, butter, sugar, both granulated and light brown, flour, salt, baking powder, eggs, and vanilla. 

You use the "muffin method" to make these. Combine the dry ingredients in one bowl, and then mix the wet ingredients in another. Then make a well in the dry ingredients, add the wet ingredients, and stir until just combined.

These muffins are easy, tasty, and are a wonderful quick breakfast or breakfast-to-go. They're also a great treat to take to work for sharing or for welcoming a new neighbor. 

You don't need to be an experience baker to successfully make these delicious treats.

While I used dates, prunes, and dried cherries, feel free to use any combination of dried fruit in these muffins.

Slice any larger dried fruit into 1/2 to 3/4 inch pieces.

These dried fruit muffins are loaded with dates, prunes, and dried cherries that have been macerated in warm apple juice to make the fruit soft and juicy.

Ingredients

  • 1 cup apple or white grape juice
  • 6 tablespoons unsalted butter, sliced into tablespoons
  • 12 ounces (375 grams) combination of dates, prunes, and dried cherries (or other dried fruit), cut into 3/4 inch pieces
  • Zest of one large orange
  • 10 ounces/315 grams (2 cups) all purpose flour
  • 4 ounces/125 grams (1/2 cup) granulated sugar
  • 2 ounces/60 grams (1/4 cup) dark brown sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs, beaten
  • 1 1/2 teaspoons pure vanilla extract

Instructions

  1. Heat the juice and butter in a medium saucepan over medium low heat until the butter has melted. Remove from the heat and add the dried fruit and orange zest. 
  2. Set aside for one hour.
  3. Heat the oven to 375 degrees F and line a 12-cavity muffin tin with paper liners. 
  4. In one bowl, whisk together the flour, sugars, baking powder, and salt. 
  5. In another or large measuring cup, stir together the fruit and juice mixture, the eggs, and the vanilla. 
  6. Form a well in the flour mixture and pour the fruit mixture into the well. Stir until just combined. 
  7. Scoop the batter evenly into each muffin cup and bake the muffins for 20 to 25 minutes, until firm on top and golden. Cool in the pan on a wire rack, and then remove the muffins from the pan and continue cooling on a wire rack to continue cooling.

  1. Great way to use up all of those bags of dried fruit that only have a bit left in them. I usually resort to sprinkling them on my cereal...I'd much rather have one of these muffins.

  3. Yummm I love the add-ins you picked for this one! I often seem to have half of a bag of random odds and ends dried fruit, nuts, etc. This seems like a great way to mix and match those!
