Yangzhou Fried Rice is a simple yet flavorful dish to make. It is a classic dish served at a Chinese banquet toward the end of the meal and it's an amazingly simple dish to prepare.
There are only five ingredients (eight if you count the oil, salt, and pepper). No garlic, no ginger, and, in this case, no soy sauce.
Some versions of this rice dish also include egg and light soy sauce, but this version skips the soy sauce to keep the rice's white color and clean flavor.
I've also read that the Cantonese use Chinese barbecue pork in place of the ham.
Ingredients in This Fried Rice:
Small Shrimp: Peeled, deveined, and cut into pieces.
White Rice: Use cold cooked rice that is a day old.
Peas: Use frozen.
Scallions: Both the white and green parts.
Salt and White Pepper.
Oil for Stir-Frying.
To Make This Rice:
It begins with stir frying shrimp in a small amount of oil, and then adding cooked long grain rice, peas, ham, scallions, salt, and white pepper. The whole process actually takes about 5 or so minutes once you'e prepped all of your ingredients.
It's so tasty, and makes a great side dish or main dish.
Make the rice the day before with just rice and water, fluff it, and put in the refrigerator.
If you have one, use a 14-inch flat-bottomed carbon steel wok to make this stir fry. If you don't have a wok, you can use a large stainless steel skillet.
For stir-frying, one of my favorite utensils to use is a fish spatula. It's lightweight and easy to maneuver.

Yangzhou Fried Rice

Yangzhou Fried Rice is a simple yet flavorful dish to make. It is a classic dish served at a Chinese banquet toward the end of the meal and it's an amazingly simple dish to prepare.
Ingredients
- 2 tablespoons vegetable or peanut oil
- 4 ounces small raw shrimp, peeled, deveined, and cut into 1/2 inch pieces
- 4 cups cold cooked white rice
- 1 cup frozen peas
- 1 cup diced (1/4 inch) ham
- 1/2 cup chopped scallions
- 1/4 teaspoon salt
- 1/4 teaspoon ground white pepper
Instructions
- Heat a 14-inch wok over high heat and swirl in 1 tablespoon of the oil. Add the shrimp and stir fry for one minute.
- Add the rest of the oil, and add the rice and peas and stir fry for 2 to 3 minutes.
- Add the ham, scallions, salt, and pepper, and continue to stir fry for one minute more. The shrimp should be just cooked through and all of the ingredients should be thoroughly combined.

ReplyDeleteThis is the kind of rice dish that I could totally fall in love with. I really like that it has ham and shrimp. B.O.B. Bob will like that is has peas...his absolute favorite!!!
